Does anyone have a good cookie recipe with fresh cranberries?!
I need to make cookies for a bus trip of about 50 people just to snack on during the ride home from a holiday show!. I would love to use fresh cranberries!. Just sounds holiday-ish! Any ideas!?Www@FoodAQ@Com

~Fresh Cranberry Cookies~
These have been a holiday favorite at our house for many a year!. They are moist cake-like cookies with lots finely chopped fresh cranberries!. The Lemon Glaze is a must and really compliments these cookies, but be sure to glaze them while they are still warm!
Ingredients for Cookies:
2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup butter, softened
2 cups brown sugar
2 eggs
1/2 cup milk
2 teaspoons fresh orange zest
3 cups oats
2 cups fresh or frozen and thawed cranberries
1 cup Walnuts, (optional) chopped to your liking
Ingredients for Glaze:
1 cup powdered sugar
1 lemon, juice of
Directions:
1!. In a food processor or blender pulse cranberries until medium-fine!. Set aside!.
2!. Cream sugar and butter!.
3!. Add all the rest of the ingredients except cranberries; mix well!.
4!. Gently mix in cranberries!. Chopped walnuts too, if you so choose!.
5!. Drop by spoonfuls on greased cookie sheet!.
6!. Bake at 375* for 8 to 10 minutes or until rim of cookie is lightly browned!. Don't over-bake or they will be dry and hard!
7!. Brush on the glaze while still warm!!!
Directions for the GLAZE:
1!. Combine powdered sugar and lemon juice till smooth!. It should be very thin like gravy!. Add more or less sugar for right consistency!.
Makes 4 - 5 dozen cookies
~Once-a-Year Cranberry Chocolate Chippers~
Once-a-Year Cranberry Chocolate Chippers combine the flavor of tart cranberries with smooth dark chocolate to create a seasonal treat that is absolutely divine! If you want some chocolate this recipe is for you!
Ingredients:
1 cup walnuts
3 cups fresh cranberries, (frozen cranberries cannot be substituted)
3/4 cup sugar
3/4 cup brown sugar
1 cup butter, softened
2 eggs
3 tablespoons orange zest
1/2 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
2 cups semi-sweet chocolate chips
Directions:
1!. Toast the walnuts by spreading them on a shallow baking sheet and placing them in a preheated 350° oven for 10 minutes!.
2!. Cool, then transfer them to the bowl of a food processor with the fresh cranberries!. Pulse on and off several times to coarsely chop; set aside!.
3!. In a mixing bowl, cream the sugars and butter until light and fluffy!. 4!. Beat in the eggs, orange zest, and vanilla extract!. Mix well, scraping the sides of the bowl!.
5!. Add the flour and baking soda; mix well!.
6!. Fold in the walnuts, cranberries, and chocolate chips just until blended!.
7!. Scoop tablespoons of the dough onto parchment-lined baking sheets!. Alternately, drop by rounded tablespoons onto the parchment-lined sheets!. The cookies should be about 1 1/2 –2 inches apart!.
8!. In the preheated 350° oven bake for 12-15 minutes or until lightly browned, but still soft!.
9!. Leave on the baking sheets for five minutes, then transfer the cookies to cooling racks!.
10!. To store, place the cookies in an airtight container in single layers that don’t overlap; place parchment or waxed paper over each layer of cookies!.
Makes 4 - 5 dozen cookies!.

Here is one that is really delicious and very Christmas! I absolutely love the cranberries and white chocolate combo!. Sometimes, I omit the white chocolate and add extra cranberries or just use bittersweet chocolate instead!. I know this calls for dried cranberries but I've used fresh!. Just be careful in handling the dough!.
Doubletree Post Oak Christmas Cookies
3 Sticks Butter Softened
1 Cup Sugar
3/4 Cup Brown Sugar
4 Eggs
1 TSP Vanilla
4 Cups All-Purpose Flour
1/3 TSP Salt

3/4 TSP Soda
1 TSP Lemonjuice concentrate

1 1/2 LBS White Chocolate Chips use good quality Lindt or similar

Preheat oven to 375* Cream butter & Sugars,add eggs & vanilla!.
Beat at low speed until mixed!.
Mix flour, salt, cinnamon, oats & soda in separate bowl!.
