Is there a way to make lemon cake without lemon cake mix?!


Question: Is there a way to make lemon cake without lemon cake mix!?
I ask because every store around my area doesnt have it!. And I want to make one!. Is there a way!?Www@FoodAQ@Com

YES!, If you have a good cake recipe, add about 1 TBSP of grated lemon peel (fresh is best, but dried works too!) and substitute about 1/4C!. of lemon juice for your liquid!. If you recipw doesn't call for added liquid (i!.e!. milk, water, ) just add it anyway!. To make it extra "lemony", you can eaisily dump into the dry ingredients a box of lemon pudding mix (Jello brand) and bake!Www@FoodAQ@Com

Impossible Pie

Ingredients (serves 4)
4 eggs
225g (1 cup) caster sugar
100g unsalted butter, softened
100g slivered almonds
1 cup desiccated coconut
2 tbs grated lemon rind
2 tbs grated orange rind
125ml (1/2 cup) lemon juice
125ml (1/2 cup) orange juice
250ml (1 cup) coconut milk
1/2 cup plain flour, sifted
Lightly whipped cream and fresh passionfruit pulp, to serve
Method
Preheat oven to 180°C!.
Place the eggs, sugar, butter, almonds, coconut, lemon and orange rind and juice, coconut milk and flour in a food processor and blend until well combined!. Pour into a buttered 28cm pie plate!. Bake for 1 hour until lightly browned!. Set aside to cool, then refrigerate for 1 hour to chill!.
Slice and serve with a little whipped cream and passionfruit!.
