It was a salad of onions and sausage in alternating layers covered with a vinaigrette!.


Creamed onions
3 bags frozen Bird's Eye tiny onions (boiled according to package directions and water reserved)
2 1/2 cups half and half
3 tablespoons butter
3 tablespoons flour
3/4 teaspoon salt
1/2 teaspoon pepper

Melt butter over low heat, gradually stir in flour, salt and pepper!. Cook, stirring constantly, until smooth and bubbly!. Remove from heat!. Slowly stir in half and half and onion water!. Cook on low heat and stir until the mixture boils!. Boil and stir 1 minute, stir in the onions!.Www@FoodAQ@Com

I had a great onion casserole at a party before!. It was delicious!. I will see if I can find one for you!.

BAKED ONION CASSEROLE

Serves 8

Ingredients:
? 6 Vidalia? Sweet Onions, thinly sliced
? 1/2 pound mild Cheddar cheese
? 1 (3 & 3/4-ounce) package potato chips, crushed
? Red pepper, taste
? 2 (10 & 3/4-ounce) cans cream of mushroom soup, undiluted
? 1/4 cup milk


Instructions:

Butter a 9x13-inch baking dish!.

Layer alternately in thin layers onions, cheese, potato chips and pepper!.

Combine soup and milk in bowl and blend well!.

Pour over ingredients in baking dish!.

Bake 1 hour in 350 degree oven!.

This is a little different than the one I tried before!. It had crackers on top of it I believe without the chips!.Www@FoodAQ@Com

What about french onion soup!?!
This is a VERY good recipe for it;

1/2 cup unsalted butter
2 tablespoons olive oil
4 cups sliced onions
4 (10!.5 ounce) cans beef broth
2 tablespoons dry sherry (optional)
1 teaspoon dried thyme
salt and pepper to taste
4 slices French bread
4 slices provolone cheese
2 slices Swiss cheese, diced
1/4 cup grated Parmesan cheese

Melt butter with olive oil in an 8 quart stock pot on medium heat!. Add onions and continually stir until caramelized and almost brown!. But do NOT burn them!.
Add beef broth, sherry and thyme!. Season with salt and pepper, and simmer for 30 minutes!.
Heat the oven broiler!.
Ladle soup into oven safe serving bowls and place one slice of bread on top of each (bread may be broken into pieces if you prefer)!. Layer each slice of bread with a slice of provolone, 1/2 slice diced Swiss and 1 tablespoon Parmesan cheese!. Place bowls on cookie sheet and broil in the preheated oven until cheese bubbles and browns slightly!.
Serves 4!.

Baked Onion Rings
Serves: 8 Servings

4 large Onions
1 1/2 cup Fine dry bread crumbs
1/2 t Poultry seasoning
3 T Grated Parmesan cheese (optional)
1 Egg (no substitutes please)
1 T Water

Slice each onion about 1/4-inch thick and separate into rings!. Soak in cold, salted water about 30 minutes!. Drain on paper towels!.
Combine bread crumbs, poultry seasoning and Parmesan!.
In a separate bowl, mix egg and water; beat well!.
Dip onion rings into bread crumb mixture, then into egg mixture, then into crumbs again!.
Salt lightly, if desired!.
Arrange rings on greased jelly roll pan, cover with foil and bake in a hot oven (400 degrees) for 10 minutes!. Remove foil and continue baking 20 minutes more, or until crispy!.
Serve immediately!.

Onion Pepper Tart

1 prepared crust for single-layer pie
1 large (14 to 16 ounces) Texas Sweet or Vidalia onion
1 Tbsp!. butter or margarine
1/2 cup chopped red bell pepper
1/4 cup diced green chiles (2 ozs!.)
1 cup shredded hot pepper Monterey Jack cheese
1 cup half-and-half
2 eggs
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon hot pepper sauce

Press pie crust onto bottom and sides of a 9-inch tart pan with removable bottom or into a 9-inch pie plate; set aside!.

Saute onion in butter over medium heat until very soft and golden brown, about 15 minutes!. Add red pepper and green chiles; saute 2 minutes longer!.

Refrigerate onion mixture 15 to 20 minutes!. Spread onion mixture evenly over bottom of tart crust; top with cheese!.

Combine remaining ingredients in a small bowl and mix well!. Pour over cheese!.

Bake at 375 degrees, 45 minutes, or until filling is golden brown and set!.

Makes 1 tart, about 6 servings!.

Take a few small onions peel them slow roast them pull out the heart ,sprinkle with tarragon , stuff it with chopped sauteed mushrooms, Gorgonzola cheese,and bread crumbs,with a little chicken stock to bring it together!. flour, egg and encrust with crumbs of choice!.sprinkle with Parmesan, drizzle with olive oil and bake until browned in 360 degree convection ovenWww@FoodAQ@Com
