Leftover Baked Potato Soup

1/2 cups finely diced leeks
1 1/2 tablespoons minced garlic
6 cups chicken stock, hot
4 large leftover baked potatoes, halved!. pulp scooped out and put through a ricer
1 1/2 cups buttermilk
1/2 cup sour cream
1/2 cup freshly grated Parmesan
2 1/2 teaspoons kosher salt
1 teaspoon freshly ground pepper
2 tablespoons Sherry vinegar
1/4 cup minced chives
Directions
In a large saucepot, over high heat melt the butter and add the leeks and garlic!. Cook over medium heat until they are translucent!. Add the hot stock and whisk to combine!.

In a separate bowl, whisk together the riced potatoes, buttermilk, sour cream, and grated Parmesan!. Add this mixture to the soup stirring constantly!. Season with salt and pepper!. Remove from the heat and add the Sherry vinegar!.

Ladle into bowls and garnish with chives

Potato Gnocchi - they are great with anything from a simple marinara sauce or your favorite bolognese sauce!.!.!.!.!.!.!.!.!.!.!.!.!.

5 baked Potatoes (warm them up in the microwave)
2 egg yolks,
1/2 teaspoon salt
1/4 cup grated Parmesan Cheese
1 1/2 cup of all purpose flour

Peel the potatoes while they are still hot and press them through a potato ricer or food mill, if you dont have either you can just mash them and then fluff them up with a fork!. Put the potatoes in a large bowl with salt, egg yolks and parmesan cheese!. Add the flour a little at a time and mix with your hands until the mixture forms a rough dough!. Do not over-work the dough!. Transfer the dough to a lightly floured surface!. Gently knead the dough for 1 or 2 minutes until smooth, adding a little bit more flour, if necessary, to keep it from sticking!.

Break off a piece of the dough and roll it back and forth into a rope, about the thickness of your index finger!. Cut the rope into 1-inch pieces!. Gently roll each piece down the back of a fork to give a nice design while pressing a small dimple with your finger!. The gnocchi should be slightly curved and marked with ridges!. This will allow the gnocchi to hold the sauce when served!.

Boil the gnocchi in batches in plenty of salted water!. The gnocchi are done about 2 minutes after they float to the surface, remove with a slotted spoon, and serve with a brown butter sauce, or a marinara sauce or a bolognese sauce!.Www@FoodAQ@Com

Twice Baked Potato

4 large russet potatoes, each about 3/4 pound each, scrubbed and dried
2 to 4 tablespoons unsalted butter
1/3 cup sour cream
1 scallion, finely chopped
Freshly grated nutmeg, optional
1/2 cup shredded sharp cheddar
Kosher salt and freshly ground black pepper


Preheat the oven to 400 degrees F!.
Trim off the top of the potatoes to make a canoe-like shape!. Reserve the tops!. Carefully scoop out most of the potato into a bowl!. Take care to leave enough potato in the skin so the shells stay together!. Mash the potato lightly with fork along with 2 to 3 tablespoons of the butter and sour cream!. Stir in the scallion, nutmeg, and season with salt and pepper, to taste!. Season the skins with salt and pepper!. Refill the shells with the potato mixture mounding it slightly!. Sprinkle the cheese on top of the potato filling!. Brush the reserved top with the remaining butter and season with salt and pepper!.
Set the potatoes and lids on a baking sheet, and bake until heated through, about 20 minutes!. Serve immediately!.

Herbed Potato Skins Recipe
3 medium baking potatoes, scrubbed
oil
4 ounces feta cheese, crumbled
1 1/2 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon rosemary
1/2 teaspoon garlic salt

Cut potatoes in half lengthwise!. Leaving a 1/4 inch shell, scoop out pulp,(save for another use)!. Cut skins in half lengthwise again, then cut in half crosswise!. Place skins on baking sheet and brush with oil!. Bake 5 minutes!. Combine remaining ingredients!. Remove skins from oven and top with cheese mixture!. Drizzle with more oil!. Broil 2-3 minutes or until cheese is bubbly!.

German Potato Salad
INGREDIENTS:
4 potatoes
4 slices bacon
1 tablespoon all-purpose flour
2 tablespoons white sugar 1/3 cup water
1/4 cup white wine vinegar
1/2 cup chopped green onions
salt and pepper to taste

DIRECTIONS:
1!. Bring a large pot of salted water to a boil!. Add potatoes; cook until tender but still firm, about 15 minutes!. Drain, cool and chop!.
2!. Place bacon in a large, deep skillet!. Cook over medium high heat until evenly brown!. Drain, crumble and set aside!. Reserve bacon fat!.
3!. Add the flour, sugar, water and vinegar to skillet and cook in reserved bacon fat over medium heat until dressing is thick!.
4!. Add bacon, potatoes and green onions to skillet and stir until coated!. Cook until heated and season with salt and pepper!. Serve warm!.

3 bacon strips, diced
1 small onion, chopped
1 clove garlic, minced
3 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon pepper 3 cups chicken broth
2 large baked potatoes, peeled
and cubed
1 cup half-and-half cream
1/2 teaspoon hot pepper sauce
Shredded Cheddar cheese
Minced fresh parsley

DIRECTIONS:
1!. In a large saucepan, cook bacon until crisp!. Drain, reserving 1 tablespoon drippings!. Set bacon aside!. Saute onion and garlic in the drippings until tender!. Stir in flour, salt, basil and pepper; mix well!. Gradually add broth!. Bring to boil; boil and stir for 2 minutes!. Add the potatoes, cream and hot pepper sauce; heat through but do not boil!. Garnish with bacon, cheese and parsley!.

Easy Potato Sausage Soup
INGREDIENTS:
2 onions, chopped
1/2 cup margarine
4 cups diced potatoes
1 (10 ounce) package frozen
diced carrots
1 pound Polish sausage, sliced
1 green bell pepper, chopped 3 cups water
1 teaspoon salt
1/2 teaspoon ground black
pepper
3 cups milk
3/4 cup dry potato flakes

DIRECTIONS:
1!. Using a large saucepan, brown onion in butter!.
2!. Add potatoes, carrots, green peppers, sausage, water, salt and pepper!. Cook on low, for about 45 minutes or until the potatoes are creamy!.
3!. Add milk and cook until heated through and then add instant potato flakes!. If you want a creamy potato soup add a 1/2 cup potato flakes, or if you want your soup thick like stew add 1 cup of potato flakes!.
4!. Let soup sit for approximately 5 minutes in order to thicken and then serve!.

Twice-baked potatoes (you've already baked them once so you're halfway there - just scoop out the innards, mix them up with the stuff you like, put back in shell and bake what you want and freeze the rest!.

mmmm I love twice baked potatoes (just scoop out the pulp after you cut them in half, then add bacon and chives and a shredded cheddar, ooh, you can even put hamburger in it, then bake em again, top with sour cream, thats a whole meal) Heres a few websites with some great ideas:

Torture the family with "potato week"!.
Each day will consist of a gruelling schedule, potato after potato after potato!.
Breakfast: Potato waffles!.

Peel them in wide strips with a knife, and fry the skins!. They're excellent for dipping!. Then cube up the rest of the potatoes and fry them in a pan!. They can go in breakfast burritos, or just top with a slice of cheese for American fries for a side dish!. Www@FoodAQ@Com

If they're not too overcooked- a potato salad- with mayo or german style with oil and bacon!. A cheesy potato soup would be good too!. If you tired of all the potatoes- you can make mashed potatoes, then store them in the freezer!.Www@FoodAQ@Com
