Question: Does this soup sound familiar to anyone!?
Its like a cream of potato soup, with some cheddar cheese and ground beef thrown in!.

BACON AND CHEESE POTATO SOUP

1 lg!. onion
1/2 c!. chopped red or green pepper
1 jar (2 oz!.) Hormel 100% real home-style bacon pieces
2 tbsp!. butter
4 med!. potatoes, peeled & diced
2 c!. chicken broth or bouillon
1 c!. milk
1 container (10 1/2 oz!.) cheese snack
Black pepper to taste
Parsley

Saute first 3 ingredients in butter in saucepan!. Add potatoes and broth!. Bring to a boil; reduce heat!. Cover; simmer 15 minutes or until potatoes are tender!. Stir in milk, Cheese Snack and pepper!. Cook over low heat until Cheese Snack is melted and soup is hot, stirring occasionally!. Sprinkle with parsley!.

Au Gratin Cheese Soup Recipe



This recipe is from the back of a box of store-brand au gratin potatoes!. Though it's certainly not homemade potato soup, it's a quick way to make a small amount of potato soup!. Portion sizes are as a side dish, if it is the main dish I would say it only serves 3-4!.!.!.!. More

1 box Au Gratin potato mix (cheese sauce mix included)
1 can chicken broth (regular size 10 - 10 1/2 ounces, not large)
3 cups water
2/3 cup diced carrots
2/3 cup diced celery
1/2 cup light cream

Directions
In a large saucepan, mix together the potato slices and cheese sauce mix from the au gratin potato package, along with the chicken broth, water, carrots and celery (everything EXCEPT the cream)!.
Stir occasionally while bringing to a boil!.
Reduce heat to medium low or low (depends upon your burners)!.
Cover and simmer 25-30 minutes!.
Stir occaisionally during cook time !.
Soup is done when potatoes are tender!.
Remove from heat and stir in cream!.
