The source below sells as many spices and seasonings as you could wish to jazz up simple chicken (84p each)!. It also sells recipe kits!. They are listed under curry kits but now include things like jerk chicken and peri peri chicken that can be made with chicken thighs!.
All the things you need to buy extra to the spice mix is listed and you get a recipe in the box making it totally failsafe!. We are mad for the curry kits and have tried most of the chicken ones!. They cost £1!.99 each, about the same as a quality cook-in-sauce but taste like you are in a restaurant so brilliant for entertaining over Christmas!.Www@FoodAQ@Com

Make a slit either side of the bone and pinch your fingerthrough the hole!. Pull the bone away from the meat while pairing it off with the knife at the same time, you should get it away nice and clean, after a couple of goes you will be getting it apart like an expert!. The best part about eating boneless chicken thighs is the fact that the meat remains moist, but you can tuck in, without the hassle of bones!. I like to add smoked paprika, cajun mixed spice, ginger, plain flour, garlic salt, celery salt and black pepper and sunflower oil, make it into a thick paste and coat the legs generously with it!. Cook on a medium heat in the oven for about 40 minutes and it beats the hell out of KFC (what spices do you like!?)Www@FoodAQ@Com
I generally just roast and eat off the bone, just chop the knuckle off with a cleaver!.
If you really want to remove the bone, I have found the best way is to remove the knuckle and the skin and bring to a boil, and then simmer until you can pull the bone out!.
Without know what you are attempting, lighly salting them will give you nice chicken but you could go on from there!.
Edit
I misread your question, I was thinking of drums!.
Thighs are difficult to debone prior to cooking without making a real mess of them!.
I still cook them the same as I mentioned above!. Allow two portions per person!. (adults)Www@FoodAQ@Com
