Seafood Casserole, how do YOU make yours?!

Seafood casseroles are really great but they don't travel well and most have to be served immediately!. I like this one because it can be served on a buffet or taken to a potluck style dinner!.
Seafood Casserole
16 ounces scallops (about 2 cups)
1 cup dry white wine
1 small onion, sliced
1 Tbsp snipped parsley
2 tsp lemon juice
1/2 tsp salt
5 Tbsp butter or margarine
6 Tbsp all purpose flour
1 cup light cream
2 ounces cut up Gruyere cheese
pepper
one 7 1/2 oz can crab meat, drained and flaked
one 4 1/2 oz can shrimp, drained
one 3 oz can sliced mushrooms, drained
1 1/2 cups soft bread crumbs (2 slices bread)
Combine the scallops, wine, onion, parsley, lemon juice, and salt!. Bring to boiling, simmer 5 minutes!. Drain, reserving 1 cup liquid!. In saucepan, melt 4 Tbsp butter or margarine; stir in flour!. Add cream and the reserved scallop liquid all at once!. Over medium heat, cook and stir until mixture thickens and bubbles; remove from heat!. Stir in cheese and a dash of pepper until cheese melts!. Add the scallop mixture, crab meat, shrimp and mushrooms!. Spoon a buttered casserole dish!. Combine bread crumbs and 1 Tbsp melted butter; sprinkle over casserole!. Bake in 350 degree oven for 25 minutes or until heated through!. Makes 6 servings!.

2 1/3 cups milk
6 tablespoons all-purpose flour
1 1/2 teaspoons butter
4 ounces Cheddar cheese, sliced
1/2 teaspoon salt
1 teaspoon black pepper
1/2 pound crabmeat
1/4 pound lobster meat
1/4 pound medium shrimp
1/4 pound scallops
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease a medium baking dish!.
Melt 3 tablespoons butter in a skillet, and saute the onions and celery until tender!.
Heat the milk in a saucepan over medium heat, and mix in the flour and 1 1/2 teaspoons butter until well blended!. Gradually blend the cheese into the mixture!. Season with salt and pepper!.
In a medium bowl, mix the onions, garlic, and celery with the cheese sauce mixture!. Toss in the crabmeat, lobster, shrimp, and scallops!. Transfer to the prepared baking dish!.
Bake uncovered in the preheated oven 25 minutes, or until the seafood is opaque and the surface is lightly browned!.

1 cup shredded Cheddar cheese, divided
DIRECTIONS
In a saucepan, saute onion in butter; blend in flour!. Add milk and cream; cook and stir until thick and bubbly!. Remove from the heat; stir in salt, pepper,garlic, pimiento, water chestnuts, lemon juice, parsley, crabmeat, shrimp, rice and half of the cheese!. Spoon into a 2-1/2-qt!. casserole!. Bake at 350 degrees F for 25 minutes or until heated through!. Sprinkle with remaining cheese just before serving!.

This is one of those little gems of ingenuity from my Nana's kitchen!. Nana always made this every Thanksgiving, and all of us kids took turns helping her make it!. It is a simple dish, but it really hits the spot on a cold November day!. I remember how my sister was absolutely shocked when she learned there was tuna in this dish!. This is definitely a dish you'll want to make again and again!.
INGREDIENTS
* 1 (12 ounce) can chunk light tuna in water, drained
* 2 cups multigrain flake cereal
* 1/4 cup minced onion
* 1 (10 ounce) can condensed cream of mushroom or celery soup, undiluted
* 2 tablespoons extra virgin olive oil
* 1 1/2 cups shredded Swiss cheese
* 1/2 cup dry roasted peanuts
