BEEF CREAM KEBABS - MALAI TIKKA
(INDIA)

1 1/2 lb!. 1" thick sirloin steak
2 tsp!. finely grated, peeled fresh ginger
1 tsp!. finely crushed garlic
1-2 tsp!. very finely minced fresh hot green chili
4 tbsp!. (1/3 c!.) double cream (heavy cream)
3/4 tsp!. salt
Vegetable oil for deep frying
1 lg!. egg
3 oz!. (1 c!.) dried bread crumbs

Cut away and discard heavy fat on meat, if any!. Cut meat into 1 inch cubes!. Place meat in bowl with ginger, garlic, green chili, cream and salt; mix well!. Cover and marinate for at least 3 hours or overnight!.
Just before eating, pour enough oil in karhai, wok, or deep frying pan to a depth of 2 inches!. Set on medium heat (medium-low flame)!. Put egg into shallow dish and beat lightly!. Dip meat cubes in egg and then in bread crumbs!. Cover generously with bread crumbs until encrusted!.

When oil is heated, put as many meat cubes in heated oil that will cover the bottom of the container with 1 layer!. Stir and fry until golden brown or the meat is done to your taste (approximately 4 minutes)!.

BEEF CURRY (INDIA)

3 lbs!. beef stew
1/2 c!. oil
1 tbsp!. curry powder
2 onions
3 garlic buds
1 tsp!. each salt and pepper
1/2 yogurt or tomato (if desired)

Fry onions and garlic buds in oil until brown, then add curry powder and beef!. Stew together for a few minutes mixing well!. Add salt and pepper, stir and cover!. Cook for 20 to 30 minutes!. Wait until meat is tender!. Enjoy over plain rice!. To add more taste, you may try adding yogurt or one pound of tomatoes!. Either way it's delicious!.

hey, i'm indian, so let me give you some amazin recipes!. one is vegetarian and other is nonveg!.
corn and potato kababs
1 cup sweet corn, boiled
1 cup potato, boiled and grated
2 tablespoons chopped coriander
2 green chillies, finely chopped
? teaspoon garam masala
2 teaspoons lemon juice
2 to 3 tablespoons bread crumbs
salt to taste
Other ingredients
oil for grilling
For serving
green chutney
Method
Combine all the ingredients in a bowl and mix well!.
Divide the mixture into 4 equal portions!.
Using a thick seekh (metal skewer), press each portion of the corn mixture on it using your fingers to make a 100 mm!. (4") long kebab!.
Brush each kebab generously with a little oil!.
Cook the kebabs over a charcoal or electric barbeque till the kebabs are evenly browned (approx!. 3 to 4 minutes), on all sides!.
Cut into pieces and serve hot with green chutney!.
Tips
If you do not have metal skewers use thin breadsticks instead!. The will make interesting edible skewers
Tandoori chicken
8 no: Large Chicken pieces
11/4 cup: Yogurt
2 tbs: Lime Juice
? quantity: Chopped Onion
3-4: Dried Red Chillies
2 tsp: Coriander Seeds
2 cloves: Crushed Garlic
1" piece: Grated Ginger
1-2: Clove
2 tsp: Garam Masala
2 tsp: Chilli powder
Salt to taste

Method
Make slits in the flesh of the chicken pieces and rub lime juice and salt over them!. Keep aside for half an hour!.
Grind dried chillies, coriander seeds, ginger, garlic and clove together!. Mix the paste with garam masala and chilli powder!.
Heat a pan and sauté the masala!. Add onions and fry!. Pour yogurt and stir well!. Remove the pan from fire!.
Arrange chicken pieces in a dish and pour over the yogurt mixture!. Refrigerate the marinade overnight or at least for 4-6 hours!.
Arrange the chicken on a broiler tray cook it in a pre-heated oven for 20-30 minutes or brush oil over the chicken pieces and cook in a gas stove turning over till both sides are done!.
Keep pouring oil and masala over the chicken pieces in between!.
