What is the purpose of doing this to tomatoes?!


Question: What is the purpose of doing this to tomatoes!?
I understand how to concasse (sp) tomatoes!. Score the bottom of the tomato, put in boiling water then into an ice bath after a minute or so!. Peel seed and core the tomato after!.
My question is why, what is the purpose of doing that!?Www@FoodAQ@Com

if you're making spaghetti sauce or something from scratch with tomatoes, when you make it, the tomatoes usually get pretty hot, causing the skin to come off, so it can get kinda icky!. i mean, if you're eating spaghetti sauce, you really don't want to eat pieces of tough skin in there!. peeled tomatoes offer smoother texture and less bitter flavor!. I agree with Mystery Woman, for a topping I never do that!. I do slice the tomato in half and sort of quick core it by scooping out some of the center/seeds just because I find the seeds unattractive!. Other than that, for a fresh bruschetta I just dice them and go,Www@FoodAQ@Com

When i make brushetta, i just cut the tomato up!. no need to do anything special!. cause when you put it all in the oven to warm it up and toast the bread it softens up the tomatoe all on its own!. That is just extra work that is not needed!.Www@FoodAQ@Com

The skin nor the seed are not very digestible!. If you check your stool after eating you will see bits of tomato skin in it!. Not a big deal but not very appetizing either!.Www@FoodAQ@Com

i would say don't waste your time ,for bruschetta just dice the tomatoes ,in restaurants we just dice them ,no need to peel

For one thing!.!.!.!.it keeps the tomato from exploding!. And, it also makes it easier to take off the skin!.Www@FoodAQ@Com
