Well there's a coincidence, I just bought one down the farmers' market! I am going to pot roast mine!.

Get your beef and remove most of the fat (keep it, you'll need it)
Heat a tiny fit of oil in a casserole pan on the hob!. Brown the meat all over quickly!.
Add a quarter pint hot water and a glass of red wine, plus herbs, salt, pepper, onions, olives, garlic and a couple of carrots to the pan!. Adjust these ingredients to your own personal taste!. I'm a bit of a Mediterranean freak myself, hence the olives and garlic!. The liquid shouldn't be more than an inch deep!.

Put lid on tight (line with foil if it's not tight)!.

Put in over for however long (depends on size of joint)!.

Get the fat you kept and put it in a small pan with a lid on!. Cook slowly till the dripping comes out!. Use this to make Yorkshire puddings!.

Cut up a leek and two carrots roughly!. Put them in the bottom of a large casserole dish and put the beef on top!. Pour in about a pint and a half of water and put the lid on!. Into the oven at 170 degrees and leave it for about 3 - 4 hours, depending on the weight!. It will be so tender you won't believe it!.Www@FoodAQ@Com

Pan sear all sides of the meat first to lock in the juices!. Then cook it on low in a crock pot!. Add carrots, potato, onion and water!. After about eight hours, depending on the weight, it will fall off the bone!.Www@FoodAQ@Com

first brown the meat on all sides to seal then put red wine or water in the botom of tin!. about a glass full then cover with foil and roast 30 min per pound at mediam heat about gass mark 5 thanks Www@FoodAQ@Com

Cook slowly on a low heat! It will keep all the juices in it then!Www@FoodAQ@Com
