Question: Anybody have a cheap dinner idea!?
it's only me and my husband so we don't need anything big!. Nothing Mexican though, he hates it unfortunatly!.

Answers:
You can never go wrong with casseroles!. It saves you less time in the kitchen and more time with your hubby!. Pair it easily with a vegetable or salad and a roll and you are good to go!. Its funny you asked this question, because some days it feels like I'm in a rut making the same things over and over!. I have a few recipes that I'm enclosing, that I'm actually considering on doing this week!.

Grandma's recipe: Chicken and Noodle Casserole

1-8 ounce pkg!. noodles
1-20 ounce chicken broth
1 pkg!. boneless/skinless chicken or 1-20 ounce can of boneless chicken
2 cans of cream of mushroom soup (or chicken)
1 cup breadcrumbs (or potato chips crushed)
1/4 cup butter

Place can of chicken broth in saucepan and dilute with 1 cup water!. Bring to a boil and add noodles; simmer 10 minutes!. Remove from heat & add chicken and soup!. Fold altogether!. Add salt to taste!. Put in 13x9 glas pan!. Melt butter & add breadcrumbs!. Stir until breadcrumbs are completely saturated with browned butter!. Sprinkle over casserole!. Bake at 300 degrees for 45 minutes!. (Serves 6-8)

Chicken-Friend Steak with Gravy

4 beef round steaks (1 1/2 pounds), patted dry
Salt & Pepper
1 cup flour
2 large eggs
1/2 cup vegetable oil
2 Tbsp!. of butter
1 cup chicken broth
3/4 cup milk

Season the steaks with salt and pepper!. Place 3/4 cup flour in shallow bowl!. In another shallow bowl, beat the eggs!. Coat the steaks with the flour, then the egg, letting any excess drip off!. Coat again with the flour!.
In a large, heavy skillet, heat 1/4 cup oil over medium heat!. Add 2 steaks and cook, turning once, until golden, 5-6 minutes!. Drain on paper towels!. Wipe out the pan and repeat with the remaining 1/4 cup of oil and 2 steaks!.
Pour off the excess oil from the pan!. Add the butter and melt over medium heat!. Whisk in the remaining 1/4 cup flour for 1 minute!. Gradually whisk in the chicken broth and milk until thickened, about 2 mins!. Season with salt and pepper and spoon over the steaks!.

There are so many cheap dinners to make!.

How about getting 2 big potatoes stab a few holes in them zap them in the microwave with the skin on til cooked!. then remove cut the top scoop out the flesh being careful not to scoop too much cos you need to stuff them again!.

Now get your pan on the stove add a little oil shallots bacon, corn, mushrooms cook till browned a little then add your potato, then add 1 cup of light cream mix well add salt, pepper then stuff your potato's with the mixture then top with grated cheese and bake under the grill until cheese is melted, serve with salad and bread!. You could top the potatoes with mince if you prefer and then add the cheese on top that's really tasty as well!.Www@FoodAQ@Com

When my mom is not in the mood to cook, she usually just makes a Shepard's pie!. It only consists of hamburger, potatoes, and corn!. Nothing special, and nothing expensive either!.

Another fun idea is to make your own pizza!. My mom and dad make them some times!. All the things in it are cheap, and it's really fun to make it! You can put whatever you'd like on it, and make it really original!.

Macaroni and cheese is easy, and simple to make!. comes in boxes that you just boil the noodles then drain then add measurement of milk, and some butter, and then the measure of powdered cheese that comes in thebox of KRAFT Mac & Cheese!. :)

also boil some noodles (any kind) then afterwards add butter, and salt to taste!. Taste good!.

Chicken and Rice

2 chicken breast diced and cooked
1 cup rice
2 cup water
1 can cr of celery, or mushroom soup
diced green pepper (optional)

mix everything together, bake for about 1 hour or until rice is done!.

cost: approx 4 - 5$ depending on how big the chicken breast are, and the if you use name brand or generic items!.

canned sauce is 99 cents if you get the store brand
you can buy whatever toppings you want pepperoni is cheap and so is cheese!. go to the bakery and get some fresh italian bread!.

CREAMY MARINARA ROTINI WITH BEEF

4 oz!. whole wheat rotini
1/2 small green, diced
1/4 medium yellow onion, sliced into strips
1/2 lb!. Chicken Breast
3/4 cups marinara sauce
1/4 cup skim milk
1 tbsp grated parmesan cheese
1/2 tbsp olive oil
Garlic powder
Rosemary leaves
Ginger
1 egg white

-Preheat oven to 375F!. Generously cover chicken in garlic and rosemary, cook for 30-45 minutes
-Meanwhile, bring water in a saucepan to a boil!. Add rotini, cook until tender (about 15 minutes)!. Rinse 2-3 times with cold water to prevent sticking!. Set aside in a bowl!.
-Wipe any leftover starch out of the saucepan!. Reduce heat to medium/low (if your oven has a 1-9 scale, reduce heat to a 3)!. Pour in olive oil and cover generously in garlic!. Add onion and green pepper, cover again in garlic, and stir!. Heat, stirring occasionally, until vegetables are soft, then add marinara sauce and milk!. Cover generously with ginger!. Stir frequently!. Reduce heat if sauce starts bubbling!.
-Once the sauce is hot, dice the chicken and stir it into the sauce!. Add parmesan cheese, stirring continuously until well integrated!.
-Whisk egg whites until texture is consistent!. Slowly add to sauce, stirring continuously for at least a minute!. Continue to stir very frequently!.
-Give the sauce about 5 minutes to fully cook (remember to stir frequently!), then add rotini to the sauce!. Rotini should still be somewhat warm from when it was cooked earlier, so it should need only a couple minutes to heat back up in the sauce!.
-Enjoy!

HINT: Green peas make an easy, tasty side dish! Green beans would also compliment the dish, or maybe a side salad with a vinaigrette dressing!.

PS: You should probably buy your chicken breast in bulk, and either save what you don't use for lunch or dinner tomorrow, or freeze unused breasts uncooked and use later!.Www@FoodAQ@Com
