I find hard boiled eggs to be one of the most forgiving foods you can make, but there's a limit!

Don't let them boil dry, and even immersed in water, don't let them boil longer than necessary, if you can avoid it!. 10-15 minutes is fine, and when you think about it, that's as if you were baking a cake and could get away with leaving it in the oven anywhere from 30-45 minutes!.
