Question: In cooking boneless chicken, how to keep the meat soft and juicy instead of dry and tough!? !?
Coating it with corn starch does the trick but gives a sweetish taste!.Www@FoodAQ@Com

First, I always pound out my chicken breasts (I cut them in half first) I put a little olive oil salt and pepper on them and set them in frig for a couple hrs!. Unless you need the corn starch as a later thickener I wouldn't use it at!. If you do need it I dredge my chicken in flour!. When you cook it you only need it sauteed on each side for a few mins (depending on the thickness) Overcooking it will lead to dry tough chicken, pounding it out helps it cook evenly and makes it very tender!. I like this method for keeping it moist and juicy on the inside and crunchy and flavorful on the outside!.

Oven Fried Chicken

4 skinless, boneless chicken breast halves
ground black pepper to taste
4 slices Swiss cheese
1 (10!.75 ounce) can condensed cream of chicken soup
1/4 cup milk
1 cup dry bread crumbs
3 tablespoons butter, melted

Preheat oven to 350 degrees F (175 degrees C)!.
Place chicken breasts in a 9x13 inch baking dish!. Season with ground black pepper to taste!. Top each breast with a slice of cheese!.
Mix together the soup and milk and pour mixture over chicken!. Sprinkle bread crumbs on top and drizzle with melted butter/margarine!. Bake covered in the preheated oven for 30 minutes!. Uncover and bake for another 20 minutes or until golden brown!.

Cook it in a thin layer of chicken broth- it works best in the oven, but also works on the stovetop!. It's sort of like a thanksgiving turkey!.!.!. if you cook it in some juices, it stays much more tender, you can even baste it if you really want it to stay moist!.Www@FoodAQ@Com

Never heard of cornstarch,why not dip chicken in melted butter and roll in crushed potato chips cover bake at 400 for about 30 to 40 min!.Then remove cover for last 15mins till golden brown!.so moist and tender!.Or try baking in a sauceWww@FoodAQ@Com
