What the matter with my fairy cakes?!
Hey all, hope your having a good day!.Was just baking cakes for the first time in a while!.They seem to have come out looking bubbly on top( like air pockets), when i tasted one i found the sugar had risen to the top which was firm and underneath an overly light sponge!.Any idea what im doing wrong!?Www@FoodAQ@Com

hey, thanks 4 hoping that we are havin a good day!. you may have whisked it too much!. Did you follow a recipe!? let me just say i think a rly good cake is this low fat one!.
Ingredients
3 eggs
75g sugar
75g flour
(if you want to make chocolate ones replace 2 tbsp of flour 4 2 tbsp of coca)
Method
pre-heat oven to 200 degrees C
crack the eggs in a bowl and pour in sugar
use an electric whisk and Whisk until if you take the whisk out and write the first letter of your name, it will still be visible for 5 secs
sieve in flour and fold it in (do slow figures of 8's until no flour left)
put in oven and keep an eye on it
when it looks cooked and springs back to the touch take it out of the oven wait to cool and dig in!

too much sugar try using less sugar and use castor sugarWww@FoodAQ@Com
sounds like too much sugar, too much raising agent, not enough flour!.
