Pot Roast (Slow Cooker)

3 lb Eye of Round Roast
3 Tbsp cooking oil (lite Olive, or canola)
3 Tbsp all purpose flour

? tsp Salt
? tsp fresh ground black pepper

1 clove garlic (minced)

4 cps baby carrots (peeled)
6 boiling onions (** cleaned)
12 baby red potatoes
2 Bay leaves

? tsp dried basil (crushed)
? tsp dried thyme (crushed)
? tsp dried rosemary
1 tsp brown sugar

Dash of Worcestershire (Optional)

4 cps water

Trim fat from roast!. If necessary, cut the roast into thirds to fit into slow cooker!.

Heat 2 tablespoons oil in a large, heavy nonstick pan over medium-high heat!. Season the beef with salt and pepper!. Dust the roast with the flour!. Place the beef into the pan and brown on all sides, about 12 minutes!. Transfer the beef to a cutting board or serving platter!.

Add 1 tablespoons of oil to the same pan!. Sauté the minced garlic over medium-high heat until it is opaque/translucent in color, about 5 minutes!.

Place the baby carrots, onions, and potatoes on the bottom of the 5 qt slow cooker!. Lay the two bay leaves on top!.

In a small dish mix; basil, thyme, rosemary, and brown sugar!. Moisten the exterior of the roast slightly (not wet)!. Rub the spice/brown sugar mixture all over the exterior of the roast coating the entire outside using all of the ingredients!.

Lay the roast on top of the carrots, potatoes and bay leaves!. Gently add the water to the edge of the crockpot, careful not to pour onto the roast as this would rinse off the seasoning!. Drop in a dash of Worcestershire sauce into the water!. Cook on low-heat setting for 10 – 12 hours or high-setting for 5 – 6 hours!. When roast is cooked, place on serving platter, with carrots and potatoes, discard the bay leaves!. Serves 4-6

Cook it in with the stock!. After it has cooked you can use the stock and meat juices to make your gravy!. Delicious if you add a some dried herbs like Thyme and some freshly ground pepper and about a quarter of a teaspoon of English mustard!.Www@FoodAQ@Com

add some stock or what i have done instead is a bit of red wine and it will also cook in its own juices!.Www@FoodAQ@Com
