Here is the recipe for the National Pie Championships' Best of Show winner, baked by Nancy Neiss of Littleton, Colo!. The pie also took Second Place honors in the Amateur Open Category!.



1 (9-inch) unbaked pie shell (recipe follows)
3 large eggs
1 cup dark brown sugar
1 cup light corn syrup
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 to 2 tablespoons bourbon
1-1/3 cups chopped pecans (large chop)



Preheat oven to 350 degrees F!. In a medium-sized bowl, beat eggs slightly!. Add sugar, corn syrup, melted butter, vanilla and bourbon!. Stir until well-blended!. Stir in pecans and pour into unbaked pie shell!. Cover edge of pie to prevent overbrowning!. Bake for 25 minutes, remove shield from edge and continue baking for another 25 to 30 minutes or more, until a knife inserted halfway between center and edge comes out clean!.



Easy Pie Pastry
2 cups all-purpose flour
1 teaspoon salt
3/4 cup butter flavor shortening
6 to 7 tablespoons ice water



In a large bowl, combine flour and salt!. With a pastry blender, cut shortening into flour until mixture is crumbly and shortening is the size of small peas!. Add water 1 tablespoon at a time, tossing well with fork!. Mixture should form a ball in the bottom of bowl!. Roll out and place in 9-inch pie plate!.

I like a bourbon pecan pie!. I like it with and without chocolate!. Here is a recipe from Paula Deen
* 1 cup sugar
* 3 tablespoons butter, melted
* 1/2 cup dark corn syrup
* 3 large eggs, beaten
* 1 1/2 to 2 cups pecan halves
* 2 tablespoons good-quality bourbon
* 1 (9-inch) deep-dish pie shell, unbaked

Directions

Preheat the oven to 375 degrees F!.

In a medium bowl, stir together the sugar and melted butter!. Add the corn syrup, eggs, pecans, and bourbon, and stir until all ingredients are combined!. Pour mixture into an unbaked pie shell, and place on a heavy-duty cookie sheet!. Bake for 10 minutes!. If you want a good, traditional pecan pie, then the recipe on the Karo corn syrup bottle is great!. However, if you want something a little less traditional, then this pecan pie is outrageous!. I'll never make a traditional pie again after making this last Thanksgiving!. It's off-the-hook delicious!

***German Chocolate Pecan Pie***

5 tablespoons butter
2 eggs
1/2 cup dark brown sugar
1/2 cup light corn syrup
2 1/2 cups pecan halves, coarsely chopped
3/4 cup sweetened flaked coconut
3/4 cup semi-sweet chocolate chips
1 ready-to-bake pie shell

Take you pie shell and prick it all over with a fork!. Bake at 375 degrees for 15 minutes!.
Meanwhile, whisk eggs in a medium bowl!. In a saucepan, whisk butter, 1/2 tsp salt, with brown sugar and corn syrup until melted and smooth!. Whick the sugar mixture into the beaten eggs!. Stir in nuts and coconut!.
Spread the chocolate chips on the botton of your pie shell!. Pour over filling and bake at 375 degrees until set, about 25 minutes!. Let cool before slicing!.Www@FoodAQ@Com

Classic Pecan Pie

1 cup Karo? Light OR Dark Corn Syrup
3 eggs
1 cup sugar
2 tablespoons butter, melted
1 teaspoon Spice Islands? Pure Vanilla Extract
1-1/2 cups (6 ounces) pecans
1 (9-inch) unbaked or frozen** deep-dish pie crust
Preheat oven to 350°F!.


Mix corn syrup, eggs, sugar, butter and vanilla using a spoon!. Stir in pecans!. Pour filling into pie crust!.


Bake on center rack of oven for 55 to 60 minutes!. Cool for 2 hours on wire rack before serving!.


**To use prepared frozen pie crust: Place cookie sheet in oven and preheat oven as directed!. Pour filling into frozen crust and bake on preheated cookie sheet!.


RECIPE TIPS: Pie is done when center reaches 200°F!. Tap center surface of pie lightly - it should spring back when done!. For easy clean up, spray pie pan with cooking spray before placing pie crust in pan!. If pie crust is overbrowning, cover edges with foil!.


High Altitude Adjustments: Reduce sugar to 2/3 cup and increase butter to 3 tablespoons!. Reduce oven temperature to 325°F!.

I love a good pecan pie!.The Best Pecan Pie Recipe;

Ingredients: 2 Eggs, Slightly Beaten, 1 Cup Light Corn Syrup,
1/4 Cup Sugar, 2 Tablespoons Flour, 1/4 Teaspoon Salt,
1 Teaspoon Vanilla, 1-1/4 Cups Broken pecans

Method: Preheat oven to 370 deg F, Spread pecans in an unbaked 9-inch pie shell, Mix remaining ingredients and pour over pecans!.

Bake at 370 deg F!. for 40 to 50 minutes or until filling is set!.

For the sweet pastry:
225g/8oz plain flour
110g/4oz caster sugar
110g/4oz butter
4 egg yolks

For the pecan filling:
3 eggs
110g/4oz sugar
4 tablespoons golden syrup
2 tbsp rum
50g/2oz butter, melted
a pinch of salt
a few drops vanilla extract
175g/6oz pecan halves



Method
1!. Make the pastry by putting all the ingredients into a food processor and whizzing until you get a dough!.
2!. Remove and place in a plastic bag and put into the fridge to relax for 1 hour!.
3!. Preheat the oven to 200C/400F/Gas 6!. Line a 9in/23cm pie tin with the pastry!.
4!. Break the eggs in a large mixing bowl and beat well and then beat in the sugar!. Add the remaining ingredients and mix well!.
5!. Pour the mixture into the pastry case and bake for 10 minutes and then reduce the oven heat to 180C/350F/Gas 4 and bake for another 30 minutes or until the top of the pie is golden!. Check if it s cooked through by inserting a skewer, it s done if it comes out clean!.
6!. Turn out of the tin when slightly cooled and serve warm or cold with vanilla ice cream or a spoonful of crème fraiche!.

CREAM CHEESE PECAN PIE (Simply Amazing!)

1 (8 oz!.) pkg!. cream cheese
1/2 c!. sugar
1 beaten egg
1/2 tsp!. salt
1 tsp!. vanilla
1 1/4 c!. pecans, chopped
2 (10 in!.) unbaked pie shells

Topping:
3 eggs
1/4 c!. sugar
1 c!. light corn syrup
1 tsp!. vanilla

Cream together softened cream cheese, sugar, beaten egg, salt, and vanilla!. Spread over bottom of pie shells!. Sprinkle pecans evenly over cream cheese layer!. Combine all topping ingredients and beat until smooth!. Pour over pecan layer!. Bake 35 to 45 minutes at 375 degrees!. Serve warm with whipped cream!.Www@FoodAQ@Com
