What is a substitute for Carrageenan?!

I am a former chef and it is a thickener/gel made from a type of seaweed, so any gelling agent from Certo, unflavoured or flavoured gelatin powder or another seaweed gel called agar-agar is a fine or a good alternative!.
Alot depends on what your making, I always add a bit of the above to certain desserts to help firm them up and in ice cream it prevents some of the crystals from forming in lower sugar and milk based ice creams!. Commercial company's use it for that reason as the air they pump into and the gel adds mouth feel and creaminess with out the high fat and expensive cream needed!.Www@FoodAQ@Com
