Answers:
Check to see if the pre-made dough uses butter or lard!. Cookies made with butter will firm up more after refrigerating, than cookies made with lard or vegetable shorting!. also the colder the dough is, the easier it is to work with!. You can use a chilled slab of marble and a chilled marble rolling pin to keep the dough cold while you work with it!. If the pre-made dough is sticky and you are rolling it out try this:
Make sure it is very cold, even if you put it in the freezer for a little while!.
try rolling it out between two pieces of parchment paper!. This way you can chill between rolling/cutting/shaping and baking!.
Feel free to dust the dough with flour!. Don't add enough flour to change the recipe!. Just dust your surface, rolling pin, cutters, ect!. Dusting 2-3 times should be fine!.
