Queen Of Puddings

1 cups stale but not dry breadcrumbs
1 quart scalded milk
3 eggs
? cup sugar
Currant jelly or plum jam
2 tablespoons sugar for meringue

Soak the crumbs in the hot milk until soft; then add the egg yolks mixed with the sugar, pour into a baking dish set in a pan of water, and bake in a moderate oven about an hour, or until custard is set!.
When cool, spread a thick layer of the jelly or the jam over the top!.
Beat the egg whites until stiff, add the sugar gradually and beat until stiff, spread this meringue on top of the jam and place in the oven until a delicate brown!.
Serve hot or cold, with cream!.Www@FoodAQ@Com

this is from Nigel Slater from the Guardian:

100g fresh or slightly stale white breadcrumbs

2 tbsp caster sugar

finely grated zest of a small orange

500ml creamy milk

50g butter

4 large eggs

a jar of apricot jam

100g caster sugar

Set the oven at 180C/gas mark 4!. Toss the breadcrumbs with the 2 tbsp caster sugar and the orange zest, then put it into a deep baking dish approximately 26cm x 22cm!.

Bring the milk and butter almost to the boil in a non-stick pan, then leave to cool briefly!. Separate the eggs, then beat the yolks and pour the warm milk over them, beating all the time!. Pour the mixture into the baking dish, then place in a roasting tin!. Pour in enough water to come halfway up the sides of the dish!. Bake for 25-30 minutes until the custard has set lightly!.

Remove the custard from the oven and take out of the roasting tin!. Melt the jam in a small pan, then spoon it over the custard!. Beat the egg whites till they will stand in firm peaks, then fold in the caster sugar!. Pile the meringue on top of the pudding and return it to the oven for 20 minutes, till pale golden on top!.Www@FoodAQ@Com
