Yes, extracts are mostly alcohol!. Usually, if you look at the ingredients list, it will tell you the percentage of alcohol in it!. The average is about 85% alcohol!. I have some peppermint extract in which it is 85% alcohol, water, and the peppermint flavour comes from a peppermint oil being mixed in!. Peppermint oil is extremely potent; therefore, the alcohol dillutes the flavour a bit!.

You can also make your own vanilla extract by taking a bottle of good vodka, split and scrape a few vanilla beans, throw the scrapings and pod in, then you just let it sit in a cool, dark place for a few weeks, shaking at least once daily!.Www@FoodAQ@Com

They are almost all alcohol, the alcohol cooks out!. Some alcoholics stay away from extracts for this reason!. I personally think its fine to use them!. Some have been known to drink extract to get an effect from the alcohol!. It really comes down to what your using the extract for!.Www@FoodAQ@Com
