Sweet Potato Pie
Ingredients:
4 ounces butter, softened
2 cups cooked and mashed sweet potatoes
2 cups granulated sugar
1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
1 teaspoon vanilla
3 eggs, beaten
1 1/2 teaspoons cinnamon
2 prepared pie shells, unbaked
Preparation:
Mix butter, potatoes, sugar and evaporated milk until well blended!. Add vanilla, eggs, and cinnamon; mix well!. Pour into the prepared pie shells!. Bake in a 350° oven for about 1 hour, until set!.
Makes 2 pies!.

Grits recipe with Cheddar cheese and garlic are a very popular way to prepare grits in the South!. I love them like this!.!.!.I'll also provide a recipe for just plain grits and you can dress them up any way that you like:-)
Grits with Cheddar Cheese and Garlic
Ingredients:
6 cups water
2 teaspoons salt
1 1/2 cups grits
1/2 cup butter
3 eggs, well beaten
16 ounces shredded sharp Cheddar cheese
2 to 3 cloves garlic, finely minced
cayenne pepper to taste
Preparation:
Bring water and salt to a rolling boil; gradually stir in grits with fork!. Cook, stirring constantly, until all water is absorbed!. Stir in butter a tablespoon at a time; stir in the beaten eggs, working quickly so eggs will not cook before thoroughly blended into the grits, then stir in the shredded cheese, garlic and a little cayenne pepper!. Put into a greased 2 1/2-quart casserole!. Bake at 350° for 1 hour and 15 to 20 minutes!. Serves 8!.
Okay, this recipe can be used as grits as a side dish with just some pepper to season it up or you can fry it up!.

Bring the water and salt to a boil in a large heavy saucepan!. Add the grits and continue to simmer, stirring constantly, over medium heat until the grits are cooked and thick like mush, about 15 to 20 minutes!. If necessary, add a little more boiling water!. (Stop here for the side dish of grits!. Add pepper to taste!.)
(Continue here for Fried Grits) Pour the hot grits onto a large plate to make a layer about 3/4-inch deep!. Cover and let stand to cool, then refrigerate to chill thoroughly!.
When the grits are cold and firm, cut into rectangular pieces!. Dredge the grits pieces with flour, shaking off excess flour!.
Heat the oil to a depth of 1/2-inch in a heavy skillet!. Fry grits pieces until golden brown on both sides, about 4 to 5 minutes total!. Drain on paper towels and sprinkle with salt!. Serve hot!. Serves 4!.

I don't have it on hand, but Georgia Jet sweet potatoes make great pies and are better baked!. Lets see if I remember grits right!. one cup of medium ground corn meal to one cup of boiling water, add more of one or the other for the right consistency!. I prefer Red Eye gravy them, that salt pork grease mixed with coffee!. MMMMMM Don't make yankee grits, that grits with velveta cheese mixed in!. Yankees can't handle straight grits!. :)Www@FoodAQ@Com
