Question: Any tricks to make cutting skin off squash easier!?
Dang, I almost cut my finger off trying to get the skin off a banana squash!. Any tricks to make this process easier on any of the fall/winter squash that are in the markets now!? ( I was cubing it to boil it)Www@FoodAQ@Com

If your ultimate goal is to puree the squash, the easiest way is to just cut it in half lengthwise, scoop out the seeds and pulp, then place it cut side down on a foil-lined, lightly oiled baking sheet and roast it in a 350o F oven for an hour to an hour and a half, or until the squash is tender!.

If it's particularly small, it will take less time, but something such as a two and a half to three pound squash should take about an hour and a half!.

When you take it out of the oven, the skin will look darker and start to sink in a little bit!.

At this point, you can either make a little cut in the skin and just pull it off!. If the skin does not easily come away and instead pulls a lot of flesh with it, just turn it over and scoop the flesh out!. It should be -very- tender!. All you have to do is mash it up by hand or throw it in a food processor or blender!. Www@FoodAQ@Com

If you only have a knife, cut the squash into smaller square pieces and peel each one!. The easiest way is with a very sharp vegetable peeler!. The square headed kind, not the older long skinny metal ones!.
Holding the squash in one hand, use a sharp vegetable peeler in the other hand to peel off the outer layer of the squash!. You can also secure the squash standing upright and peel it in downward strokes with the peeler!.

Make my boyfriend do it!.

One of his favorite things in the world to eat is butternut squash soup!. I love to cook, but I HATE cutting the skins off squash!. Cubing the squash is no picnic either!. I almost sliced the palm of my hand clean through last winter!.!.!.which is why my boyfriend now cuts the squash for his soup!. Even as "manly-man" as he is, he still struggles with it!.
