Substituting sausage with tofu in a recipe?!


Question: Substituting sausage with tofu in a recipe!?
I found a really good recipe of sausage stuffed mushrooms and it tastes awesome, but my dad is trying to lower his cholesterol so he can't have sausage!. Can I subsitute the sausage with tofu!? If I can is there any kind of spice or sauce I can add to the stuffing mixture to make it taste more like sausage so it still tastes similar!?

3 tbsp!. rosemary, ground
10 tbsp!. sage, ground
7 tbsp!. salt
3 tbsp!. plus 1 tsp!. marjoram
3 tbsp!. plus 1 tsp!. basil, powdered
3 tbsp!. plus 1 tsp!. garlic powder or salt
3 tbsp!. plus 1 tsp!. cayenne, if desired

Mix all ingredients!. Store in a glass jar!. Shake well before using!. Makes about 1 cup of seasoning!. You won't need all of this seasoning, only about 2 Tablespoons per lb of tofu!.Www@FoodAQ@Com

If you freeze firm tofu it will crumble and have a more "meaty' texture!. Try this - take a block of firm tofu and drain it well then place in a container and marinade it in an italian red wine dressing - then freeze!. When you are ready to make the dish allow tofu to thaw then crumble with the other ingredients for your stuffing!. Alternately you could use ground turkey with italian seasoning!. Tofu is so tasteless, they won't be awesome, no matter what spices you add!. Why not substitute with ground chicken or turkey instead!.Www@FoodAQ@Com
