How do you cook kidneys?!


Question: How do you cook kidneys!?
was in a hurry picked up prepacked kidneys instead of liver!.one of these days!.what do i do to them and how should i cook them!.Www@FoodAQ@Com


Answers:
You need to de-vein the first!. Put them in two half's from top to button and remove the white bit in it!.

They are actually really great and are better (if eaten on a weekly basis) than liver due to less Vitamin A content!.
Salt them after frying, just before you are ready to serve them ( give them one last shake in the pan)Www@FoodAQ@Com

season,saute in butter with cayenne pepper!.remove set aside!.
deglaze the pan with white wine or brandy, double cream and dijon mustard!. check for seaoning and finish with chopped parley!.add the kidneys to the sauce and served on toasted buttered granary toast!.

You can grill them, fry them or cook them in a pie, for example steak and kidney pie!. Lancashir hot pot can also be made using kidneysWww@FoodAQ@Com
