Four Cheese Macaroni Casserole

Ingredients-
3 cups uncooked macaroni
1 (28 ounce) can whole peeled tomatoes, drained and chopped
1 teaspoon Italian seasoning
1 teaspoon dried oregano
1 teaspoon basil
salt and pepper to taste
1 1/2 cups grated Cheddar cheese
1 1/2 cups shredded mozzarella cheese
3/4 cup freshly grated Parmesan cheese
1/4 cup crumbled feta cheese


Preparation-
Preheat oven to 350 degrees F (175 degrees C)!.
Bring a large pot of lightly salted water to boil over high heat!. Add macaroni, and cook until al dente, about 8 to 10 minutes!. Drain, and pour hot pasta into a casserole dish!.
Meanwhile, in a large bowl, stir together tomatoes, italian seasoning, oregano, basil, salt, and pepper!.
Stir into the hot pasta 1 cup of Cheddar, 1 cup of mozzarella, and 1/2 cup of Parmesan!. Continue to stir until the cheeses have melted!. Then stir in tomato and herb mixture!. Sprinkle 1/2 cup Cheddar, 1/2 cup mozzarella, 1/4 cup Parmesan, and 1/4 cup feta over the top of the casserole!.
Bake in preheated oven for 15 to 25 minutes!.

4 cup cooked elbow macaroni, drained
2 cup grated cheddar cheese
3 eggs, beaten
1/2 cup sour cream
4 tablespoon butter, cut into pieces
1/2 teaspoon salt
1 cup milk

Directions:
Preheat oven to 350 degrees!.

Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the cheddar!. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture!. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes!. Top with additional cheese if desired!.

Sauce:

Please note that these ingredients are all required but approximate quantities are given!.

3 – 4 Tablespoons oil or butter
3 – 4 Tablespoons flour
Milk
250g Cheddar Cheese (grated)
250 g Mozarella Cheese (grated)
3 Eggs

Method:

Prepare Macaroni as per instructions on the box!.

Pre-Heat the oven to 200 degree C

Sauce:

Heat the oil/butter in a saucepan until reasonably hot!.

Add the flour and mix it in (make a roux) i!.e!. the result should be a loose paste and not crumbly!.

Add the milk, a little at a time and stir briskly with a whisk or wooden spoon!. It is important that you stir well every time you add the milk to ensure that lumps do not occur!.

Keep adding the milk until the sauce is a reasonable consistency and amount – not too runny but also not like porridge!. Stir all the time!!

Once the sauce is right, add the grated cheese and stir in!. Be careful that the stove is not too hot because otherwise the sauce will burn!.

Remove the pan from the stove and then stir in the eggs one at a time, making sure that they are well stirred in (you can beat the eggs first but that is not really necessary)!. Just stir them in well!.

Put the macaroni into a casserole dish and pour the sauce over!. Put this into the oven and reduce the temperature to 180 degree C for an hour!.

This mac and cheese is amazing and one of my fave dishes!. It comes out like a cake

Directions
Cook and macaroni and drain in!.
In a oven safe bowl pour the macroni!.
Add the soup, shredded cheese and milk, enough to make it creamy!.
Crumble up ritz crackers and cover the top of the macaroni with them!.
Bake it on 400 for about 15-20, until the ritz crakcers are golden!.

Homemade Mac & Cheese is the best!

Try this recipe; it's AWESOME:

Ingredients:
1 tablespoon vegetable oil
1 pound elbow macaroni
1/2 cup butter PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 tablespoon
1/2 cup shredded Muenster cheese
1/2 cup shredded mild Cheddar cheese
1/2 cup shredded sharp cheddar cheese
1/2 cup shredded Monterey Jack cheese
2 cups half & half
1 cup Velveeta, cut into small cubes
2 large eggs, lightly beaten
1/4 teaspoon salt
1/8 teaspoon black pepper, freshly ground


Directions:

Preheat oven to 350:!. Lightly butter a deep 2 1/2 quart casserole!. Bring a large pot of water to a boil over high heat, add the oil then the elbow macaroni and cook until macaroni is just tender (about 7 minutes)!. Do not overcook!. Drain well and return to the pot!.

In a small saucepan, melt the first measure of butter!. Stir into the macaroni!. In a large bowl, mix the Muenster, mild and sharp Cheddar cheese and the Monterey Jack cheese!. To the macaroni, add the half & half, 1 1/2 cups of the shredded cheeses, the cubed Velveeta and the eggs!. Season with salt and pepper!. Transfer to the buttered casserole!. Sprinkle with the remaining 1/2 cup of cheese and dot with the remaining butter!.

Bake until it is bubbling around the edges, about 35 minutes!. Serve hot!. Since you have no way to reheat, make it at the last minute & get one of those insulated carriers!.
