How can I make my baked mac and cheese come out creamy instead of chunky?!
Every recipe I've tried seems to come out kind of clumpy instead of the cheese being really melted throughout the macaroni!. If you have any tips, I'd sure appreciate them!. I DO NOT want to eat horrible mac and cheese again this Thanksgiving!Www@FoodAQ@Com

Melt a half stick of butter in a small sauce pan on medium heat!. Add enough flour (approx!. 2 tblsp) whisk it to make a paste, then add 2 cups of milk and whisk until it's smooth and starts to thicken!. Add your cheese to that and melt it then pour it on your mac!.

Baked Macaroni and Cheese
Alton Brown
1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup Panko* bread crumbs
* Panko is a Japanese bread crumb – Substitute plain or Italian if desired!.
Preheat oven to 350 degrees F!.
In a large pot of boiling, salted water cook the pasta to al dente!.
While the pasta is cooking, in a separate pot, melt the butter!. Whisk in the flour and mustard and keep it moving for about five minutes!. Make sure it's free of lumps!. Stir in the milk, onion, bay leaf, and paprika!. Simmer for ten minutes and remove the bay leaf!.
Temper in the egg!. Stir in 3/4 of the cheese!. Season with salt and pepper!. Fold the macaroni into the mix and pour into a 2-quart casserole dish!. Top with remaining cheese!.

I think you need a cheese sauce to mix into your macaroni before baking!. That way it will be smooth and creamy!.

This makes about one cup

3/4 cup evaporated milk
1 cup finely grated process American cheese
pepper, to taste
Preparation:
Heat milk in a heavy saucepan until steaming hot; do not boil!. Stir in cheese, heating and stirring until cheese starts to melt!. Remove from heat; stir until all cheese is melted and sauce is smooth!. Add pepper to taste!.
Pour hot over macaroni, top with bread crumbs, pour melted butter over top and bake in oven until bubbly and bread crumbs brown!.

seems everyone is into processed cheese these day!. seems people have forgotten the old ways of fondue!.!.!.!. try fontina mixed with a white cheddar blended with 1/4 as much of heavy cream!. bring to low rolling boil!. pour over par-boiled elbow mac noodles/or tri color rotini and top with grated manchego!. i bet you run out before the turkey!.!.!.Www@FoodAQ@Com
I usually use the recipes that the others suggesated!. I have heard of putting cream cheese in it, it's supposed to make it creamier!. I found this off of a recipe online
A simple recipe with simple ingredients: large elbow macaroni, extra-sharp cheddar and cream cheese!. A little butter!. Two eggs!. Some milk (half-and-half, if you want to splurge)!. Salt!. Pepper!. And bread crumbs!.
Put 'em all together, bake it good and you've got a dish dubbed Mac's Mac 'n' Cheese!. And it's a winner!.

What kind of cheese are you using!? Try a high quality mozzarella (like Salerno) or even just use Velveeta!. It will be super creamy & not chunky at all!.Www@FoodAQ@Com
