Cook some boneless skinless chicken breasts in a skillet with a little oil about 4 minutes per side on medium heat!. Add one chopped onion, cook briefly and add 1 cup of chicken broth!. Cook about 3 minutes then add one jar of spaghetti sauce!. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes!. Meanwhile, cook some spaghetti following directions on the box!. Drain the pasta and serve the chicken and sauce over the pasta!.

If you like, add beef bullion cubes to the milk and skip the liquid beef broth!.
Delicious with cooked pasta or as a meatball sandwich!.
? cup unseasoned dry bread crumbs
? cup Romano or Parmesan cheese, finely grated
? cup whole milk
? cup low-sodium beef broth
? cup chopped fresh parsley
1 egg, beaten
1 teaspoon dried oregano
2 teaspoons garlic, minced
2 teaspoons kosher salt
2 teaspoons ground black pepper
1 teaspoon dried basil
? teaspoon dried pepper flakes
Pinch nutmeg
1 LB ground turkey or ground meat of your choice
Yield: about 16
Combine all ingredients and stir thoroughly with a fork!.
Bake at 450F for 25 minutes or fry as desired!.

- 4 bone-in, skin on chicken breasts
- 1 can cream of broccoli soup (or you can use cream of mushroom or chicken)
- 1 cup milk
- 3 cups frozen hash browns
- 1 can durkee fried onions
- 4 slices american cheese
- 1 bag frozen mixed vegetables
Heat oven to 375 degrees!. In a deep baking dish, combine frozen hash browns and 1/2 the can of durkee fried onions!. In separate small bowl, mix soup and milk together!. Pour 1/2 the mixture over the hash brown/onion mixture in the baking dish!. Take 4 slices of american cheese and lay them out in a single layer on top of the potatoes/onions!. Place your chicken breasts skin side down on top of the cheese!. Pour the rest of the soup/milk mixture over the chicken!. Bake uncovered 30 minutes!. After 30 minutes, pull the pan out, mix the frozen veggies into the potato/onion mixture (under the chicken) and flip the chicken over so the skin side is now up!. Bake another 25-30 minutes until chicken is done!. Pull out and place the 2nd half of the durkee fried onions on top of the chicken!. Bake for another 5 minutes or until fried onions are crisp!. Let stand 2 minutes before serving!.
