I miss my favorite restaurant the Claim Jumper, and they make the most awesome potato cakes, does anyone know how to make them!?Www@FoodAQ@Com

POTATOE CAKES

5 potatoes medium to large
2 egg
1 c!. of flour
1 large onion
1 large tub of sour cream

Peel 5 large potatoes uncooked shred potatoes in large mixing bowel!. Shred 1 peeled onion into bowl also, In another bowl beat 2 eggs, Combine the flour and eggs into the bowl with potatoes and onion!. Mix by hand not using any machine to get best results!. Make small patties and cook in a lighty greased pan until golden brown on both sides!.
Serve with loads of sour cream and enjoy!.

If it is mashed potato cakes - add minced onion - about 1/4 cup onion and 1 egg, 2 T of half and half or cream per 2 cups of potatoes, salt & pepper to taste!.

IF grated:

Latkes
(Makes about 28 potato pancakes, 2-3 inches each)

2 pounds russet (baking) potatoes, peeled and placed in a bowl of cold water
? cup grated onion
2 eggs, lightly beaten (1 egg per pound of potatoes)*
1 cup all-purpose flour (best) or ? cup matzah meal**
1 teaspoon salt, plus additional to taste
Freshly ground black pepper to taste
Peanut or canola oil for frying

Line a large baking sheet with paper towels!. If not serving the latkes immediately—out of the frying pan into the dining room—preheat the oven to 200 degrees!. Have a large bowl of cold water ready!.
Grate the potatoes, using a hand grater or food processor fitted with the medium shredding disc!. As potatoes are grated, transfer them to the bowl of water!. When all of the potatoes are grated, set aside for 5 minutes!. Drain the shredded potatoes in a large colander, rinsing with cold water!. Transfer to a clean bowl!.
Add the onion, the eggs, flour, salt, and pepper!. Thoroughly combine the mixture!.
In a large, preferably straight-sided pan, add oil to a depth of ? to ? inch!. Heat oil until a shred of potato dropped in the oil sizzles immediately!.
Form pancakes, using 2 tablespoons from a regular silverware set!. Scoop up a generous spoonful of the potato mixture with one spoon, flatten the mixture with the other spoon!. Slide the latke into the oil!. Repeat until the pan is full, but not crowded!. Cook the latkes until browned at the edges!. Turn the latkes over and cook until fully browned!. Transfer the finished latkes to the lined baking sheet to drain excess oil!. Repeat with the remaining mixture!.
If not serving the latkes immediately, transfer the sheet to the preheated oven to keep warm!. If serving even later, set the latkes aside to cool to room temperature, then freeze until ready to serve!. Reheat the latkes in a 350-degree oven, and drain again on paper towels because reheating will release more oil!.
Serve with sour cream or applesauce!. Add salt to taste!.

Things You’ll Need:

* leftover mashed potatoes (a cup or more)
* 2 farm fresh eggs
* 1/4 teaspoon baking powder
* dash of salt and pepper
* iron skillet



Potato cakes like grandma's
step1
Beat the 2 eggs!. Then mix all the ingredients together in a bowl!.
Step2
Heat up an iron skillet on the stovetop!. You can grease the skillet with a butter wrapper to use up the remnants of butter or margarine!. Grandma used a dab of plain lard or bacon drippings to fry the small cakes!. Of course bacon drippings add to the flavor!. It's OK to use a cooking spray instead, but it won't have the same flavor!.
Step3
Drop the mixture by the spoonful on the greased, hot, iron skillet!. You can try it on a non-stick skillet with that spray stuff, but I don't know how it will turn out!.
Step4
Lower the heat and fry until brown on one side!.
Step5
Turn them over and brown the other side!.
Step6
My husband likes his with ketchup on them!. I like mine plain!. Some people like them with a little sour cream!. Www@FoodAQ@Com
