How do cafes make the round poached eggs?!
The yolks are still round (but soft) and the whites look as if they have been wrapped around them!. I read somewhere that making them in deep water and stirring it around as fast as possible is how it is done, but this just broke up all the white and all I got left with was the yolk!Www@FoodAQ@Com

You have to start with room-temperature eggs, cold eggs will break up!.
Fill a saucepan with water, add some salt, bring it to a boil and then cut the heat off, when it stops bubbling, stir the water in a circular direction quickly, and then drop the eggs in, one at a time!.

The restaurant has a special pan that separates each egg into its own round space!. There is water in that space and the egg poaches neatly without breaking!.
