Answers:
Yes you can over cook something in oil!.!. If the oil looked odd she may have fried something in it before and that was the residue from the previous use and that should be ok!. However make sure you watch what you are cooking really well so as not to start a fire!. Oil will catch fire if left to get too hot and bubble over onto the heat unit you have it on!. Www@FoodAQ@Com

I note that you said you turned it on, after you put the chicken in!. It is best to have the oil hot first, then put the chicken in!. That way it will cook quicker and won't absorb too much oil!. Now you have used the oil for chicken, I wouldn't use it for anything else!. I'm a great believer in one use only, on the rare occasions I do use oil, especially if it has had any kind of raw meat in it, whether it be chicken, beef, etc!. It is too easy to cross contaminate if the oil wasn't hot enough!. I prefer to use a non stick pan to roast chicken, don't need the cholesterol and don't like the taste of oil, even the best of oils!.

As the others have said, be careful when heating oil and never leave a pan of oil unattended!.Www@FoodAQ@Com

I never said cooking was difficult!. But sometimes it seems so!. You have to tell the Denny's server to tell the cooks not to overcook the chicken strips or they turn into jerky treats!. Nasty!. I love Denny's chicken strips!.!.!.
It is okay to reuse oil!. It looked odd!? Like discoloration!? That happens!.
If it tasted like chicken, by golly gee willakerz, it is chicken, Son!
