Spicy Chicken with Sauce over Pasta
presented by King George IV Inn


Serving for two!.
Ingredients:
1 large chicken breast, cut in half
flour, for dredging
4 Tbsps!. unsalted butter
3 Tbsps!. olive oil
1 medium onion, peeled
5/8 cup whole milk
1/2 lemon
3/4 cup tomato sauce
1 chicken bouillon cube
1 tsp!. paprika
6 to 8 drops Tabasco sauce
1 to 1 1/2 tsps!. salt
Freshly ground pepper to taste
5 sprigs Italian parsley!.

Dredge chicken pieces is flour and saute' them in butter and oil in a saute' pan, until brown on both sides!.

Mince the onion and add it to the chicken!. Continue cooking until the onion is limp!. Mix the milk with the juice of the lemon half and add to the chicken!. Add the tomato sauce, bouillon cube, paprika, Tabasco, salt and pepper!.

Stir the sauce well, bring to boiling, cover the pan, lower the heat and simmer the chicken for about 20 minutes or until tender!. Stir 2 or 3 times as the chicken cooks!.

Mince the parsley leaves with a bit of the stem and mix with the grated rind of the lemon!. Stir parsley and lemon rind into the pan!. Cook another 5 minutes!.

Serve over angel hair pasta and garnish with freshly steamed broccoli

Cheddar Baked Chicken


1/4 cup butter, melted
1/2 cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 egg
1 tablespoon milk
1 cup shredded Cheddar cheese
1/2 cup Italian seasoned bread crumbs
1 cup crispy rice cereal
3 skinless, boneless chicken breast halves - cut in half
2 tablespoons butter, melted

Preheat oven to 350 degrees F (175 degrees C)!. Coat a medium baking dish with 1/4 cup melted butter!.
In a bowl, mix the flour, salt, pepper, and garlic powder!. In a separate bowl, beat together the egg and milk!. In a third bowl, mix the cheese, bread crumbs, cereal!. Dredge chicken pieces in the flour mixture, dip in the egg mixture, then press in the breadcrumb mixture to coat!. Arrange in the prepared baking dish!. Drizzle 2 tablespoons butter evenly over chicken!.
Bake 35 minutes in the preheated oven, or until coating is golden brown and chicken juices run clear!.

Chicken Valentino:
4 boneless, skinless chicken breasts-butterflied
1 2-cup bag of shredded italian cheese
1 small red pepper
6 oz!.mushrooms (white or portobella)
1 bunch green onions
Italian seasoning

Chop pepper, slice mushrooms, slice up white part of green onions and saute in butter!. Place butterflied chicken breasts in casserole dish and stuff with vegetable mixture and handful of cheese!. Sprinkle in Italian seasoning, fold closed!. Bake at 350 for 30 minutes!. Chop ends of green onions, sprinkle over top of chicken breasts before serving!.

Here's something different, but super easy:

Chicken with peppers & onions, zucchini & salsa!.

Place 2 chicken breasts halves (or whatever amount you're making) into a baking pan!.

Slice pepper strips and thinly slice onions!. Put over top of chicken!.

Slice zucchini and quarter slices!. Put over chicken peppers & onions

Pour a jar (or more) over all!. Bake at 350 deg!. F until chicken is tender!.

Chili Cheese Chicken
2 tablespoons extra-virgin olive oil
1/2 teaspoon chili powder
!/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper

Chicken Mozzarella Bake

INGREDIENTS:
4 to 6 chicken breast halves
salt and pepper
garlic powder
1 tablespoon olive oil
1 tablespoon butter
8 ounces sliced mushrooms
1 tablespoon butter
2 to 3 tablespoons Marsala or white wine, or use chicken broth
1 medium to large tomato, sliced
4 to 6 green onions, thinly sliced
8 ounces Mozzarella cheese, sliced
PREPARATION:
Pound chicken breast halves between sheets of plastic wrap until evenly thinned out!. Salt and pepper both sides then sprinkle lightly with garlic powder!. In a large skillet, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat!. Add chicken to the heated skillet; cook for about 5 minutes on each side!. Remove to a baking dish!. Add 1 more tablespoon butter to the skillet along with the wine or broth then saute the mushrooms until tender and golden brown!. Pour mushroom mixture over chicken in baking dish!. Top with tomato slices and sliced green onions!. Place Mozzarella slices over all!. Bake at 325° for 25 minutes!.
Serves 4 to 6!.

Crispy Chicken


Ingredients:
1 tsp!. dried thyme leaves
1 tsp!. dried minced chives
1/2 tsp!. dried basil leaves
1/2 cup dry purchased fine bread crumbs
1/4 cup grated Parmesan cheese
1/2 tsp!. salt
1/8 tsp!.!. pepper
1 Tbsp!. olive oil
4 boneless, skinless chicken breasts
1 egg, beaten
Preparation:
Prepare two sided grill!. In shallow pan, combine the herbs, bread crumbs, grated cheese, and salt and pepper!. Drizzle the olive oil over this mixture, working it into crumbs gently until crumbs are coated!.
Place chicken breasts between two sheets of waxed paper!. Using a meat mallet or rolling pin, lightly pound the breasts until they are about 1/2" thick!.

Dip chicken breasts into beaten egg, then firmly press each coated breast into bread crumb mixture!. Cook the chicken breasts on two sided dual contact indoor grill for 4 to 6 minutes until thoroughly cooked and until juices run clear!.

OR you can place the chicken on a greased pan and bake in a preheated 400 degrees F oven for 16-24 minutes until thoroughly cooked!. 4 servings

Chicken parmesan!.
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
2 to 3 tablespoons olive oil
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese
Preparation:
Whisk together the egg and milk!. Dip the chicken breasts in milk and egg mixture and then in bread crumbs!. Heat olive oil in a large skillet over medium-high heat!. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side!. Set chicken in a baking dish!.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast!. Pour 1 jar of your favorite spaghetti sauce over all!. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly!.

BONELESS CHICKEN BREAST WITH WHITE
WINE

Spray two 11x14 inch casseroles with Pam!. Place breast to cover casserole!. Put 1/2 slice of Swiss cheese on each!. Add 2 cans cream of chicken soup and 1/2 cup of least expensive white wine, mixed thoroughly!. Spread over chicken breast and Swiss cheese!. Cover well, but not thick with Pepperidge Farm seasoned stuffing!. Preheat oven to 350 degrees and bake 1 hour!.

HINTS: To reheat, heat in a 300 degree oven thoroughly, 300 degrees prevents drying!.

If you freeze casseroles, allow overnight thawing in refrigerator!.

Before freezing, allow flavor to ripen overnight in refrigerator!.

BONELESS CHICKEN DICONTI

1/2 c!. olive or corn oil
1 med!. onion, chopped fine
1/2 c!. sweet vermouth
2 to 2 1/2 lb!. boneless chicken breasts, cut into 3/4 to 1 inch pieces
6 Italian peppers, cut into rings or 2 lg!. green peppers, cut into 1 inch pieces
1/2 tsp!. rosemary, crushed
1/2 tsp!. ground black pepper
Salt to taste
6 plump or 3 med!. round tomatoes, cut into very sm!. pieces

Use skillet large enough to hold all ingredients!. Place in the oil and onions!. Cook on medium heat, stirring often, for 10 minutes!. Add vermouth, then chicken, peppers, rosemary, salt, and black pepper!. Cook on medium-high for approximately 10 minutes, stirring frequently!. (If vermouth dries and causes chicken to stick, add a little water!.) Add the tomatoes and continue to cook on medium heat for 15 minutes!. Remove and serve!. Makes 4-6 servings!.

NOTE: This dish goes well with rice!.

NOTE: To remove skin from tomatoes drop tomatoes in boiling water for 30 seconds to 1 minute!. Then place in cold water for a couple of minutes, then skin can be removed!.

2 whole breasts
2 tbsp!. olive oil
1 tsp!. thyme
1/4 tsp!. salt

STUFFING:

1 med!. onion, chopped
1 tbsp!. olive oil
1 tbsp!. butter
1 pkg!. frozen spinach, drain and thaw
1/2 c!. ricotta cheese
1/2 c!. Parmesan cheese
2 lg!. basil leaves, chopped

SAUCE:

1 c!. plain low fat yogurt
1 tbsp!. red wine vinegar
1/4 tsp!. salt
Pepper, to taste
1 tomato, cored, peeled and chopped
4 basil leaves, chopped

STUFFING: Saute onion in olive oil and butter!. Add spinach and cook on low!. Add rest of ingredients and stuff chicken!.

SAUCE: Mix all and leave at room temperature!.

CHICKEN: Bake at 375 degrees for 45 minutes (covered 1/2 time) pour sauce over chicken when serving!.

Chicken Parmesan with FRESH Mozzarella and FRESH basil leaves

To make the chicken, dredge in flour, then whisked egg, then bread crumbs!. Bake in 375 oven for 40 mins!.

Cover with a nice chunky tomato sauce and then bake FRESH mozzarella on top under your broiler!. Be careful, only broil for about 1-2 mins!.

Top with fresh torn basil leaves!.

Serve with spaghetti!?

Here's a treat: Rub packaged Fajita spice on the breasts!. Pan fry them to brown them and place in a 400F oven to continue cooking for 7 - 10 minutes!. Really tasty!

Cool them and slice on the bias, and serve them on top of a salad!.!.
