Is butter or bacon drippings better for a turkey?!


Question: Is butter or bacon drippings better for a turkey!?
I usually cover my turkey with bacon drippings and fill the cavity with apples, onions, and celery!. This year I was thinking of putting butter between the skin and turkey breast!. What do you think!? Any opinions appreciated!.Www@FoodAQ@Com

I use butter seasoned with herbs under the skin!. I do like the apples, onions and celery in the cavity!. I am going to try that!. I bet that lends to a sweet, yet savory flavor!. I would like the butter better then the bacon with those flavors!. Www@FoodAQ@Com

I think either are fine!. They both lubricate what can be a bit of a dry bird if not cooked with care, and will give very distinctive but delicious flavour to your turkey!. Why not ring the changes this year and try the butter and see what you think !? Flavoured butters ( ie with garlic/herbs/lemon etc ) can also be used!. Good luck :)Www@FoodAQ@Com

They both work well!. If you do the butter under the skin, make it a compound butter!. That means to mix it with snipped herbs and crushed garlic!.!.!.or any other flavoring you like!. It works well and smells great and lets you add more flavor to the meat!. I also cover the outside of the bird with melted butter and chopped garlic which browns nicely!.Www@FoodAQ@Com

I don't do either!. I tie butcher string around the bird sideways in a couple of places and half way through the cooking time I flip it over!. The fat and juices from the dark meat run down into the white meat and it ends up very moist and juicy!. We cook our turkey on the grill, so I don't put anything in the cavity except salt and pepper!.

That sounds really good!. Putting butter between the skin and turkey breast!. But, you should make sure that the entire turkey gets it's share of butter too or it'll get jealous! LOL Your turkey sounds delicious!!

Use churned unsalted butter and balsamic herb oil combined!.
For more garden vegetable flavor in your turkey add freshly chopped cilantro!.Www@FoodAQ@Com
