Works the same with about any cheese!. Cheddar and mozza share the same consistency both hard and melted so you should be able to use them interchangeably!. I like making a "quick quiche" by adding spinach and mozza to my omelet or scrambled eggs!. I never had a problem!. You always need to be careful about getting the cheese on the pan!. If you aren't using a teflon or non-stick pan, it will crust on there!. Otherwise you're fine!.Www@FoodAQ@Com

I do this often, but since moz doesn't have a lot of flavour!.!.!.it's the texture and the 'stringiness', that's so wonderful, I always add other ingredients to 'pump up' the flavour profile!. Try adding some crumbled bacon, some sauteed onions and a bit of sun-dried tomato!. also herbs, spices, plenty of fresh ground pepper!. Since the flavour of the cheese is neutral, you can add almost anything you like!. Yum!.!.!.I'm off to make myself one right now!.Www@FoodAQ@Com

It works best with a cheese like mozzarella as this doesn't have as much moisture as say American Process slices!.Www@FoodAQ@Com

Yes, mozzerella works!. In fact, if you saute some sweet peppers and add them in along with the mozzerella it makes a great scramble!Www@FoodAQ@Com
