Question: Easy, good, snow-day dinner's!?
My kid's are home today because of the snow!. I have been making lots of hearty soups and stews for dinner lately but need more ideas!. I have made loaded baked potato soup a lot and they really like that!. Something thick and hearty like that but not with potatoes (or broccoli, most won't eat it) is what I am looking for!. If you have any ideas that would be great!.!.!.!.please share your recipe:) Thanks!!Www@FoodAQ@Com

Variety! Why don't you try something other then soups, something warm can be yummy, and it doesn't have to be soup or stew!

You can try tacos, where you bake the shells and then put the ground beef, cheese and any other topings in the middle and allow your husband and kids to fill the shells for themselves!.

You can also try different casseroles, shepard's pie, stir fry, pasta and chicken and potatoes!

Here's my family's fave hearty meal recipe:

- Badoodalie soup (aka Italian meatball soup)

First, make meatballs!. I use ground beef of course, mixed with 1 egg and spices!. For spices I use parmesan cheese, black pepper, a little garlic salt, garlic powder, parsley, oregano, and italian seasoning!.

Then get a pot and fill it with chicken broth/soup (i buy the cans of campbell's chicken broth or i use my leftover turkey broth when i make this after thanksgiving dinner)!.

Plop the meatballs into the pot of broth!. Make sure the meatballs are completely covered!. Now all you have to do is cook them on the stove!. Bring the broth to a boil and then simmer until the meatballs (badoodalies) are fully cooked!. This takes about 20 minutes!.

Enjoy! Serve with cheese and crackers!. I also sprinkle parmesan cheese on top of my bowl when serving!.Www@FoodAQ@Com

A stew- any kind of meat and seasonal vegetables with a bit of stock, left simmering for 2 hours is very hearty and warming and neednt use potatoes!

also, I love risotto, especially at this time of year with seasonal mushrooms, it too is very warming, and hearty but not too heavy, though you could add some cream if you wanted to make it more rich!.Www@FoodAQ@Com
