Answers:
1st lambs liver is the best from a good butcher!.

2nd flour it (like a fish at the chippy one side then the other!.)

3rd flash fry it ( use a hot pan your only sealing it )

4th once all the liver is frying and getting a real good thick crispy add onions and have a couple of oxo in a pint of water and put it in the pan
5th deglace the pan this means slowly stir the pan and release all the bit off the bottom of the frying pan then ad what ever you use to make gravy i use flour and oxo thicken to taste and away you go the longer you can leave it on a low heat in the oven the tenderer it gets

1 lb calf liver
1 cup milk
6 tablespoons flour
1 teaspoon salt
garlic powder
1 tablespoons oil or bacon grease
1 onion

Gravy
2 cups beef broth
2 tablespoons lemon juice
1 tablespoon sugar
1/4 cup sour cream

Soak liver in milk for one hour!.
Remove from milk and dredge in flour/salt mixture!.
Saute in hot oil until browned on all sides!.
Remove and set aside!.
Brown onions in same pan!.
Remove onions and set aside on top of liver!.
Add beef broth, lemon juice and sugar to hot pan and deglaze!.
Place liver and onion back into pan and cook for 5 minutes!.
Turn off heat and add sour cream!.
Serve with parsley whipped potatoes and your favorite green vegetable!.

Calf's liver is really lovely but only needs cooking for a short time!. Coat it in seasoned flour and fry in batches!.
The onions need sweating really slowly in butter and a little oil until they are very soft you can than use these to make your gravy and serve with your liver!. Lambs liver is cheaper and more easily available and you probably do not need to be so careful with it!. You can casserole lambs liver with onions in the oven but do not overcook!.Www@FoodAQ@Com

Beef liver!. You can make it just as you would a steak!. A little oil in a pan some onions too!. Salt and pepper your liver!.!.!.!.!.!.cook on each side, remove both liver and onions to a plate!. Now I found a way to make gravy that is easy and really good!. Do not rinse the pan!. Put some soy sauce into the pan, I'd say about 1/4 to 1/3 of a cup!. Scrape up the bits and remove from flame!. In a measuring cup add 2 spoons of flour and about a cup of water and mix with a fork until thoroughly blended!. Put the pan back on the flame!. Add the water flour mixture and stir until it boils, let it boil ONE MINUTE ONLY, then remove from flame lower the heat!. Taste, add salt and pepper as you like, you may need some more soy sauce and add a 1/2 spoon of sugar, yes sugar, it would not be sweet it will round it out!. When the gravy is thick enough for you add the liver, onions and any juices back to the pan flip the liver to coat and stir, cover with lid, remove from heat and let stand a minute or two!. I prefer pigs liver!. Put the liver and sliced onions in an ovenproof dish, cover with a lid or tin foil and cook very very slowly!. If you cook it to quick the liver will be like shoe leather!. I usually do mine in a slow cooker for about 5 hrs on low!. What time are we eating - lolWww@FoodAQ@Com

I always use pigs liver,first i brown and sear it in a frying pan with just a little oil,add a chopped onion,then add some water and let it simmer for about an hour don't over cook as the liver becomes crumbly and loses it's flavour!.Www@FoodAQ@Com
