if it's fresh cheese from like a deli- yes!.
if it's in the jar that you get off of the shelf, it's not necessary!.

Depends on the type!.
The "Kraft" shredded cheese in the plastic container says to refrigerate after opening!. But I've also left it out by accident, and it hasn't hurt it!.
The finely grated in the green can says do NOT refrigerate!.
I just follow the directions on the container!.

It isn't required but some people feel like it is safer that way!. I personally believe that it absorbs unwanted odors from other food products in the fridge!. I keep mine in a glass dispenser just like the ones in the Pizza or Italian Restaurants!. It is better that way, I feel!.Www@FoodAQ@Com

Unless it's that crap that you buy in the container!. We keep that in the cupboard!. But if it's real, and fresh and you grate it yourslef, fridge!.Www@FoodAQ@Com
