How do you make buttermilk pancakes EXTRA fluffy?!
I'm looking for either a generic way to make any pancake recipe more fluffy, or a complete recipe for extra fluffy pancakes!. Thanks everyone!Www@FoodAQ@Com

Avoid beating your flour in--just stir it into the wet ingredients until it is blended, let it sit for 5 minutes, and load up your griddle!. Beating the flour in too much developes the gluten in the flour and makes it harder for the bubbles to get large that are created from your chemical leavening (baking powder and soda)!.Www@FoodAQ@Com
Back when my boyfriend worked as a cook for Denny's, he always noticed that ice-cold pancake batter made the most fluffy pancakes!. Try refrigerating your batter before you cook with it!.
A few other tips regarding pancakes
- Try using buttermilk in your pancakes instead of milk or water!. Your pancakes will taste even better and I've heard it may result in more fluffy pancakes (haven't proved this myself, but maybe you can tell me if it works)!.
- Be sure not to over mix your batter!. Because pancake batter is a quick bread, it should still contain lumps when you're "done" mixing (little pockets of dry flour are ok)!. A smooth batter will yield less fluffy and chewy pancakes!.
- Batter that is too thick will yield thick and doughy (not light or fluffy) pancakes!. Too-thin batter will have nowhere to rise!. Experience will allow you to figure out the perfect consistency!.
- Make sure you're flipping your pancakes at the right time!. You'll know it's ready to flip when the edges of your pancakes look dry and there are bubbles breaking on the surface!.

If you want to use your own recipe, just add a 1 tsp!. baking powder to yours!.

1 cup buttermilk, organic is best!.
1 cup sour cream
1 tsp!. baking powder
1 tsp!. baking soda
1 cup flour

Make sure your batter isn't too runny to begin with, and personally I add a teaspoon or two of vanilla extract to my pancake batter to really make them plump up when they cook (it sweetens them a little but its not overwhelming at all)!. Www@FoodAQ@Com
