Here's the Egg Salad recipe from the EggBeaters website:

PAM? Original No-Stick Cooking Spray
1 cup Egg Beaters? Original (1 cup = 8 oz)
1/3 cup fat free mayonnaise
1/4 cup finely chopped celery
2 tablespoons thinly sliced green onions
1 teaspoon Gulden's? Spicy Brown Mustard
Lettuce leaves and tomato slices, optional

Directions

--------------------------------------!.!.!.

Spray small microwavable dish with cooking spray!. Add Egg Beaters!. Microwave on HIGH 1 minute; stir with fork!. Microwave on HIGH an additional 45 seconds, or just until center is set!.
Place cooked Egg Beaters in medium bowl; toss with fork until broken into bite-size pieces!. Let stand 15 minutes, or until cool!.
Add mayonnaise, celery, onions and mustard; mix well!. Serve on lettuce leaves with tomato slices, if desired!.

This turns out to be kind of like "scrambled eggs salad" as most egg salads are composed of hard cooked eggs that are mashed coarsly and dressed with usually a mayonnaise based flavored dressing!.!.!.!.!.!.!.!.Try it out, you might like it!.!.!.!.!.!.on the other hand, you could make traditional egg salad, but ditch some of the egg yolks and use light mayo or plain nonfat yogurt as the dressing base!.!.!.!.!.!.Remember, all the fat in an egg is in the yolk!.!.!.!.!.!.!.EggBeaters are basically emulsified egg whites that have been colored with annatto (a natural seed coloring) and beta carotene!.!.!.!.!.!.!.

I don't know how you would make egg salad with egg beaters, but if you want healthier egg salad, just make it using less ( about half) of the yolks!. as the whites have no fat content at all, and use lite or fat free mayo!.Www@FoodAQ@Com

onda crackers and onda phuds are classicalll !!!! Www@FoodAQ@Com
