Question: Tricks for smoking a turkey, and keeping it moist!? !?
I have been given the honor of making this years turkey, I am smoking it!. Are there any tricks or procedures for making sure it doesnt dry out!?Www@FoodAQ@Com

Don't let the temp in the smoker go above 225, put a pan of liquid under the grates directly below the turkey, I have used apple juice, orange juice and beer, all make for a nice taste!. I have also used applewood, oak, hickory and mesquite for the wood and have found that the best taste was had with a combination of hickory and apple!.Www@FoodAQ@Com

I plan on smoking mine too!. I'm going to use one of those flavor injector syringes to shoot it full of seasoned chicken broth!. Just make sure you strain the broth before you put it in the syringe!. My smoker also came with a bowl for the wood chips!. I use straight wood fire in mine so I don't need the bowl for chips, so I'm going to put some kind of liquid like beer in the bowl to help steam the turkey a little!. I'm probably only going to smoke the turkey for about 4 hours and then finish it off in the oven!.Www@FoodAQ@Com

My dad used to smoke turkey on holidays when I was little!. I just remember him putting sliced lemons and oranges, a few cloves of garlic, onion and celery stalks in the cavity!. Then he would baste every now and then during the smoking process!.Www@FoodAQ@Com
