Chocolate Chunk Cookies

Step1
Whisk flour, baking soda and salt in small mixing bowl!.
Step2
Use electric mixer to combine butter and sugar until fluffy!. This may take 2 to 3 minutes!. Add vanilla and eggs to mixture and beat until incorporated!. Add flour mixture and beat only until combined!. With a spoon, stir in chocolate chunks!.
Step3
Cover and place in refrigerator for at least 1 hour!.

How to Bake Chocolate Chunk Cookies

Step1
Preheat oven to 375 degrees and be sure rack is in center of oven!. Line baking sheets with parchment paper or non-stick aluminum foil!. Roll two tbsp!. of dough into round balls on baking sheet and flatten only slightly!.
Step2
Bake cookies 8 to 10 minutes or until lightly golden brown!. Check them after about 6 minutes, as ovens vary and some cook quicker than others!.
Step3
When cookies come out of the oven, allow them to cool on wire cooling racks, if possible!. Feel free to try them while warm, when they taste their best!

Dark Chocolate Chunk Macadamia Nut Cookies

Last winter, I accidentally discovered what is probably the greatest cookie recipe of all time while baking with one of my guy friends!. We were using the Joy of Cooking chocolate chip cooking recipe but we modified it to perfection (accidentally!)!. Instead of one cup of semi-sweet chocolate chips, we chopped up 3/4 lb of Ghirardelli dark chocolate with a large chefs knife!. We used way more chocolate than we were supposed to!. Additionally, we used cultured butter, or plugra instead of regular butter!. Plugra has a higher butter fat content and causes the cookies to be crispy on the outside and perfectly moist on the inside!. Last but not least, we used decadent Macadamia Nuts!.!.!. probably a cup or two cups, chopped!. The recipe is below!


1 cup plus 2 tablespoons all-purpose flour
? tsp!. baking soda
8 Tbsp!. (1 stick) unsalted cultured butter, softened
? cup sugar
? cup packed light brown sugar
1 large egg
? tsp!. salt
1? tsp!. vanilla extract
as much chopped dark chocolate as you would like!. We added 2!.5 cups!. good quality is necessary -- Ghirardelli, Lindt, Godiva, Green and Blacks etc!.
1-2 cups of chopped macadamia nuts!.

1!. Position a rack in the center of the oven!. Preheat the oven to 375 degrees!. Grease cookie sheets!.
2!. Thoroughly whisk together the flour and baking soda!.
3!. Beat the butter and sugars on medium speed until very fluffy and well blended!. Add the egg, salt, and vanilla, and beat until well combined!.
4!. Stir the flour mixture into the butter mixture until well blended and smooth!. Stir in the chocolate chips and the nuts (if using)!.
5!. Drop the dough by heaping measuring teaspoonfuls onto the sheets, spacing about 2 inches apart!. Bake, 1 sheet at a time, until the cookies are just slightly colored on top and rimmed with brown at the edges, 8 to 10 minutes; rotate the sheet halfway through baking for even browning!. Remove the sheet to a rack and let stand until the cookies firm slightly, about 2 minutes!. Transfer the cookies to racks to cool!.

INGREDIENTS
2 3/4 cup(s) all-purpose flour
1/2 teaspoon(s) baking soda
1/8 teaspoon(s) salt
1 cup(s) (2 sticks) butter or margarine, softened
1 cup(s) sugar
1 large egg
1 teaspoon(s) almond extract
1/3 cup(s) (about 3/4 cup pistachios in shell) shelled pistachios, finely chopped
Green paste food coloring
1/3 cup(s) red candied cherries, finely chopped
Red paste food coloring


1!. Line 9-inch by 5-inch metal loaf pan with plastic wrap, letting wrap extend on all sides!. On waxed paper, combine flour, baking soda, and salt!.
2!. In large bowl, with mixer at medium speed, beat butter and sugar 4 minutes or until light and fluffy, occasionally scraping bowl with rubber spatula!. Add egg and almond extract and beat until well blended!. Reduce speed to low; beat in flour mixture just until blended, occasionally scraping bowl!.
3!. Transfer 1 rounded cup plain dough to medium bowl; with spoon, stir in pistachios and enough green food coloring to tint dough bright green!. In another bowl, place 1 rounded cup plain dough; stir in cherries and enough red food coloring to tint dough bright red!.
4!. Evenly pat pistachio dough into bottom of prepared pan; freeze 10 minutes!. Pat plain dough on top of pistachio layer; freeze 10 minutes!. Pat cherry dough on top!. Cover pan with plastic wrap and refrigerate 4 hours or overnight, until dough is firm enough to slice!.
5!. Preheat oven to 350 degrees F!. Remove dough from pan; discard plastic wrap!. With serrated knife, cut dough crosswise into 1/4-inch-thick slices!. Cut each slice crosswise into 3 cookies!. Place cookies, 2 inches apart, on ungreased large cookie sheet!.
6!. Bake cookies 10 to 12 minutes or until firm and golden brown at edges!. Cool cookies on cookie sheet on wire rack 2 minutes!. With wide spatula, carefully transfer cookies to rack to cool completely!. Repeat with remaining dough!. Store cookies in tightly covered container at room temperature up to 2 weeks, or in freezer up to 3 months!.
