There is no one right way to do it!. Everyone has their own preference!. Some say put it in a bag, some not!. Some say cook it with stuffing some not!. Here's how I like to do it: I make sure I thaw the turkey if it's frozen at least three days before!. I then brine it (soak it - remove giblets first) with 1 cup of Kosher salt per gallon overnight!. I also put one clove of crushed garlic in the mix!. Remove from brine and let drain!. Turn oven up as high as it will go - volcano heat!. Wait about a half hour - 45 minutes until the oven reaches max temp!. Put the bird in a roasting pan and put it in the oven!. Wait until the skin blisters and browns and remove it!. Turn oven down to 325!. wait until it cools!. At this point you can season it!. I put a mix of my own (a secret) and a little apple cider and three or four crushed cloves of garlic on the inside!. Plug the cavity with foil!. Put the giblets in the pan for the gravy you will make later (Jarred gravy!? Bite your tongue), cover the whole thing with foil and roast 20 minutes per pound for an 8-12 pound bird, 15 minutes per pound for 12-16 pound birds or until the little thingy pops up!.
