Answers:
Just remember "life begins at 40"!. That means that 40 degrees is the temperature at which bacteria begins to grow!. Life ends at 140, so to kill bacteria you must reach a temp of 140 degrees or more to be safe!. Refrigerate at 40 or below, cook to 140 or above to be safe!. Www@FoodAQ@Com

The danger zone---the temperature range where bacteria grow rapidly---is 40-140 degrees F!.

Obviously, food will pass through that zone while cooking!. But once past 140 bacteria are killed!. Almost all food---particularly animal protein---is cooked to a higher temperature!.

There is a special techique called sous vide, which uses vacumn bags and circulating oil, that does cook at lower than normal temperature!. But they still bring the food past the 140 number!. It just takes longer!. Www@FoodAQ@Com

anything below 140 is not safe

Just remember the rule below 40 to above 140 is safeWww@FoodAQ@Com

i use a crockpot alot and that cooks at a low temp for a long time!.!.!. as long as the meat reaches a certain temp(fully cooked) your good to go!!Www@FoodAQ@Com

Around 180 would probably be too low!. Www@FoodAQ@Com
