Cooking torch for Creme Brulee?!


Question: Cooking torch for Creme Brulee!?
So I've decided to make Creme brulee for desert this year but I can't figure what kind of torch to use!. My brother has a blowtorch he uses for machines and I figured that I *could* use that, but I heard that you need to get a certain type of cooking torch for food because certain flames emit poisonous gases!? Can anyone help me clarify!?Www@FoodAQ@Com

no you can use that torch but the problem you might find is the force of the flame is pretty strong and could blow the sugar right off the top!. As long as you hold the flame slightly further back you should be ok!. It's not poisonous though, same flame!. They do make a smaller torch but why spend the cash when you have one already!.Www@FoodAQ@Com

I would be worried about the type of gas as well!.

Buy a proper cooking one and the recommended gas!.

You can always preheat your grill (broiler) and do it the old fashioned way!.Www@FoodAQ@Com

I thought I saw a chef use a regular blowtorch but I've never done it!.Www@FoodAQ@Com
