Question: What causes cheesecake to crack while baking!?
Answers:
Not enough moisture, air bubbles, and dry/heated environment!.
Before you put the cake in the oven, pick it up and gently drop it back down on the counter, gently - and any air bubbles should come to the top and dissipate!.
Then, wrap the bottom of the pan and around the side of the pan with tin foil so that no water gets in, and set the cheesecake pan into another, larger pan holding about 1-2 inches of water!. Bake the cheesecake at a lower temperature for a longer period of time and will come out smooth, moist and tasty!Www@FoodAQ@Com

You can prevent that by using a waterbath!.!.!.place the springform pan inside a large roasting pan (like you'd use for a turkey) and very carefully pour hot water inside the roasting pan so it surrounds the cheesecake pan (but no water gets in the cheesecake)!. Pour enough water in to reach halfway up the side of your cheesecake pan and bake the normal amount of time and this protects against cracking!.Www@FoodAQ@Com

Too much heat can cause a cheesecake to crack!. Put a baking thermometer in the middle of the cake and take it out of the oven when it reaches 150 deg!. You can also keep the spring form in a vat of water to make it cook more evenly!. The cracks are from when the edges cook before the middle!. Www@FoodAQ@Com

I notice that when I do a side crust it cracks less,as the pans sides generate more heat then the crust!. I also think it happens when I bake it to fast!. Bake @ 300 with a pan of water in oven!. Www@FoodAQ@Com

its because you are packing the crust down too hard
eventually it brakes so next time just don't pack the crust down too hardWww@FoodAQ@Com
