Making pumpkin pies, and we have a cup of pumpkin pie mix left over, can we do anything with it ?!
Or do we just have to get rid of it!?Www@FoodAQ@Com
Answers:
I have made pumpkin bread with left over pumpkin pie mix also I have sprayed the small inch muffin tins and baked it without any crust!. just cook for a few minutes, you can test it with a cake tester and see if the tester comes out clean, then it is done, usually within 15 minutes at 350 degrees!.
or you can just dump it!.

I used my leftover filling for pumpkin pudding; if you follow the link, there is the picture!.
(I made these using left over Pumpkin Pie filling and I came up with 10 puddings; the ingredients below are for 1 whole filling so it would make more than 20 puddings!.)
Steamed Pumpkin Pudding
# 1 can pumpkin puree (425 ml)
# 1 can sweetened condensed milk (300 ml)
# 2 eggs
# 1 1/2 tsp cinnamon powder
# 1 tsp ginger powder
# 1/2 of 1 nutmeg, grate
# 1/4 tsp ground cloves
# Mix all ingredients very well then pour into cups, steam for 30 minutes!.
# Cool to room temperature, flip cups onto serving plates, decorate with melted chocolates, serve!.
You can either serve the pudding warm, cool, or cold from the fridge!.

You can cook it and eat it!.
There are a couple of ways to achieve this without disturbing you pies in the oven!.
You could put it in a ramekin and put it in the oven with your pie when there's about 20 minutes left to bake!. It'll make a little pumpkin custard with no crust
You could also put it in a saucepan and heat it up on the stovetop until it boils!. You'll want to stir it pretty much the whole time until it comes to a boil, but then you can cool it and eat it!.
Either way, you just need to heat it up enough that the eggs in it cook!. Everything else is fine!.

Put it in a small bowl, mix with crushed pecans, sprinkle marshmallows on top!. Bake until done, marshmallows are golden!. Serve warm!.
Or, if you have them, place the rest in little ramekins for a smaller portion of dessert for those who are watching their waistlines and want to forego the crust!. You can make it like a pumpkin creme brulee if you add sugar on top and torch it (if you have a kitchen torch)!.Www@FoodAQ@Com

Put it in a small buttered ramekin or casserole and bake it without the crust, it makes a pudding!. The filling tastes better than the stuff inside the crust!Www@FoodAQ@Com
