Any recipes for left over turkey?!


Question: Any recipes for left over turkey!?
I am wondering if anyone has some recipes for all of that left over turkey!. I already make a good turkey stir fry, hot turkey sandwiches with gravy, turkey soup, and regular turkey sandwiches!. I am looking for something different this year!. Www@FoodAQ@Com

TURKEY TETRAZZINI

1/2 (8 oz!.) pkg!. spaghetti
1 (10 oz!.) pkg!. frozen peas
1/2 tsp!. Worcestershire sauce
1 tsp!. salt, dash pepper

SAUCE:

1 (10 1/2 oz!.) can cream of mushroom or chicken soup
1 c!. turkey stock (or use 1 c!. canned clear chicken broth)
1 c!. grated sharp cheddar cheese
2 c!. cubed, cooked turkey
1/4 c!. whole toasted almonds (opt!. but great)
1/2 c!. grated Parmesan cheese
Paprika

Cook spaghetti and peas as package labels direct, drain and keep hot!. Make Sauce: In small saucepan, combine all sauce ingredients, mixing well!. Over medium heat, bring mixture to boil stirring!. Remove from heat!. Toss spaghetti with peas, turkey, almonds and half the sauce, just until combined!. Turn mixture into shallow 2 quart baking dish!. Pour over rest of sauce; sprinkle with cheese and paprika!. Run under broiler 4" from heat, about 4 minutes or until tetrazzini is brown and bubbly!. Serve hot!.Www@FoodAQ@Com

My ma made turkey hash- it is now a family favorite!. We would find ourselves not eating the turkey on Thanksgiving so she could make a lot!. Mix left over turkey, stuffing, dice up a couple potatoes, season to your liking and mix- throw into baking dish and pour chicken stock over- cover and bake until potatoes are tender!.Www@FoodAQ@Com

I found this recipe for Four Seasons Enchiladas on allrecipes!.com!. It's made from leftover turkey:

"Ingredients:
1 (4 ounce) can chopped green chile peppers, drained
4 ounces cream cheese, softened
1/2 teaspoon ground cumin
2 cups chopped cooked turkey
8 (8 inch) flour tortillas
1 (16 ounce) jar salsa
1 (16 ounce) can chili beans, undrained
1 cup shredded Monterey Jack cheese

Directions:
1!.Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease a 9x13 inch baking dish!.
2!.In a medium bowl, mix chile peppers, cream cheese, and cumin!. Stir in chopped turkey!.
3!.Place the tortillas in a microwave oven!. Heat for 1 minute, or until the tortillas are softened!. Spread about 2 heaping tablespoons of the chile pepper mixture on each tortilla, and roll up!. Place the rolled tortillas, seam-side down, in single layer in the prepared baking dish!.
4!.In a medium bowl, combine the salsa and beans!. Spoon the mixture over the enchiladas!. Sprinkle the top with cheese!.
5!.Bake 20 minutes in the preheated oven, or until bubbly and lightly browned!."
