at 165 not only will your turkey be on its way to overdone your stuffing will probably be undercooked!. Stuffing is in the center of the turkey and the heat needs to penetrate!. What you will have is bread cubes soaking up lots of turkey juice and getting just warm enough to become a thriving microbial toxic stew!. At 180 breat temp your turmey is on its way to charcoal!. Cook the stuffing seperately and I'll bet no one can taste the difference!. I find the best way to cook a turkey is unstuffed at 500 for thirty minutes and then cover the breast only with tin foil and return to a 350 oven for 2 to 2!.5 hours for a 14 - 16 lb bird!. This works just fine!. Dark meat!.!.legs and thighs!.!.!.require a higher temp to get done!. The foil will act as an insulator to make the dark and light meat come out both done properl at the same time!. I suggest reading Alton Browns turkey recipe!. Just type in Alton Brown Turkey!. Put a meat thermometer into the meat of the turkey!. If you have stuffing inside it will be done when the temperature reaches 165 etc!.Www@FoodAQ@Com
