What can I do with all these carrots?!
Can anyone give me a decent recipe, dessert, main course, anything, that contains lots of carrots please!.
I have a big bag of carrots I need to use up!.

Carrot Bread recipe
Carrot Bread ingredients list:
4 medium eggs!.
2 ? cups of flour!.
2 cups of carrots, shredded finely!.
1 ? cups of sugar!.
1 ? cups of corn oil!.
2 teaspoons of cinnamon!.
2 teaspoons of baking powder!.
1 ? teaspoons of baking soda!.
? teaspoon of salt!.
Instructions for Carrot Bread:
Preheat your oven to 350°F (175°F)!.
Cream the corn oil and sugar!.
Add each of the four eggs one at a time, beating thoroughly after each is added!.
Blend in the flour, cinnamon, baking powder, baking soda and salt!.
Fold in the shredded carrot!.
Bake in a greased loaf pan for about 90 minutes!.
Allow to cool on a wire rack!.

1 1/2 tsp cream of tartar!.

1/3 C frozen pineapple juice concentrate, defrosted!.
2 tsp vanilla
2 egg whites, unbeaten!.
1 1/2 C grated, peeled carrots!.
2 4 oz!. jars carrot baby food puree!.
1 C raisins!.
2 egg whites, lightly beaten!.
Instructions for Carrot Cake:
Preheat oven to 325F!.
In a large mixing bowl, combine flour, baking soda, cream of tartar, cinnamon and nutmeg!.
Set aside!.
In medium bowl, mix honey, juice concentrate, vanilla, unbeaten egg white mixture and carrots!.
Stir into flour mixture and mix until just blended!.
Stir in raisins!.
Gently fold in lightly beaten egg white mixture!.
Spoon batter into two 9" round nonstick baking pans!.
Bake at 325 degrees for 40-45 mins or until toothpick comes out clean!.
Cool on wire racks for 20-30 mins and remove from pans!.

1 sm Bag of Original Crisps
Instructions for Carrot Casserole:
Make alternating layers of carrots, soup and onion into a greased casserole dish!.
Bake for 20 to 25 minutes in a hot oven or until thoroughly piping hot an bubbling!.
5 minutes before serving, sprinkle the crushed crisps over the top of the casserole and put back into the oven to brown

In a bowl, mix together the mayonnaise, lemon juice, maple syrup and a pinch of salt!.
Add the carrots, tossing to mix!.
Allow to stand for about 45 minutes!.

In a suitably sized skillet, melt the butter over a medium heat!.
Cook the chopped onion, stirring, until softened!.
Add the baby carrots, chicken stock, honey and thyme; then simmer uncovered for about 20 minutes until the liquid evaporates and the carrots are tender!.
Stir in the parsley!.
Serve as desired!.

INGREDIENTS
* 1 tablespoon canola oil
* 2 teaspoons curry powder
* 1 medium clove garlic, smashed
* 1 (1/2-inch) piece ginger, peeled and smashed
* 1/2 medium onion, coarsely chopped
* 1 pound carrots, peeled and sliced into 1/4-inch-thick rounds
* 1 medium bay leaf
* 2 1/2 cups low-sodium vegetable broth
* 1/2 cup canned coconut milk
* Toasted unsweetened coconut flakes, for garnish (optional)
INSTRUCTIONS
1!. Heat oil in a medium saucepan over medium heat!. Add curry powder and garlic, and toast until fragrant, about 30 seconds!.
2!. Add ginger, onion, carrots, bay leaf, and broth!. Increase heat to medium high and bring mixture to a boil, reduce heat to medium low, and simmer until carrots are soft when pierced with a fork, about 20 minutes!. Discard bay leaf!.
3!. Working in batches, process soup in a blender until smooth!. (Be very careful when blending the hot soup, as steam could blow off the blender lid!.)
4!. Pour soup into a clean pot and return to the stove over medium heat!. Stir in coconut milk and adjust seasoning as needed!.
5!. To make appetizer portions, serve small amounts of soup in shot glasses or demitasses!. Garnish with a few flakes of toasted coconut, if using!.

how about what I do with my carrots!. My son is the only 1 in the family that loves carrots cooked, so heres what I do with them cooked!.

I like to cook the carrots until they are tender then add brown sugar, pumpkin pie spice, butter or vegetable oil and salt and pepper to taste!. Www@FoodAQ@Com
Well, carrot cake with raisins and Cinnamon in is horrible, so just make a normal cake and add shredded carrot to it!. it tastes lovely :)Www@FoodAQ@Com
