I've made this casserole with either yams or sweet potatoes!. Yes, sweet potatoes are a lighter color than the deep orange yams, but you can use them for the same recipe!. Don't stress, just make it as you would with yams!.Www@FoodAQ@Com
John B nailed it!. Actual yams are unavailable in most of North America, but in some areas (particularly the US south) the name is used to refer to sweet potatoes!. If you're using an American recipe and it calls for "yams" or "sweet potatoes," they probably mean the same thing, even though the naming is technically incorrect!.
The Wikipedia page on yams can show you what an actual one looks like!.Www@FoodAQ@Com

In many places in the United States super markets call sweet potatoes "Yams"!. However, they are sweet potatoes, not Yams!. Sweet Potatoes (scientific name Ipomoea batatas) are native to South America and are most likely what your super market is selling!. True "Yams" (Dioscorea Dioscoreaceae) are native to Africa, so I doubt your local supermarket carries true Yams!. So use the "yams" from your super market and have a great thanksgiving!Www@FoodAQ@Com
A yam and a sweet potato are the same thing!. But as for it being white I think you may have bought the wrong potato, perhaps they switched the sign in the produce section on accident!? (that's happened to me before)!. So unless you've grown up in an area where alll sweet potatoes are white I would visit the grocery store andget yams or swet potatoes(because they're the same thing)!.Www@FoodAQ@Com
I've never seen white sweet potatoes, to be honest!. Nor have I ever seen a sweet potato casserole or pie that wasn't brownish/orange!. The only white potatoes I know of are - well - just plain potatoes!. I'd stick with the yams, but maybe someone else knows something that I don't!.
Good luck!.Www@FoodAQ@Com

Generally, in the US when you buy a "sweet potato", it is a yam!. I don't know why they call them sweet potatoes, but they do!. Most likely the recipes that say sweet potatoes are going to be made with yams also!.Www@FoodAQ@Com

The american sweet potato is just one specific type!.
