i have four unusual but delicious cookie recipes you might want to use!. theyre pretty simple too (im 17 and i have no problem baking all of these!.) the first is really sweet and delicious (oatmeal peanut butter cookies with m&ms and chocolate chips-theyre soo good!) the second is sophisticated and yummy (white chocolate coconut marshmallow!.) the third is chocolaty and super tasty!. and the fourth is nutty and sweet!. i tried to vary the flavors of the cookies to suit all tastes!.
1!.) Monster Cookies
Ingredients:
1/2 cup all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
6 cups quick-cooking oats
1 cup unsalted butter, softened
2 cups creamy peanut butter
2 cups granulated sugar
2 cups firmly packed brown sugar
1 teaspoon vanilla extract
1 tablespoon corn syrup
4 large eggs
2 cups semisweet or dark chocolate chips
2 cups M&M's
Directions:
Preheat oven to 350 degrees F!. Butter cookie sheets!.
In a large mixing bowl, sift together flour, baking soda and salt!. Whisk in oats until combined!.
In a VERY large mixing bowl, using a mixer on medium speed, beat together butter, peanut butter, granulated sugar and brown sugar, until creamy, about 2-3 minutes!. Beat in vanilla, corn syrup and eggs, until well combined, about 2 minutes!. Beat in flour-oat mixture until combined!. Beat in chocolate chips and M&M's until well combined!.
At this point, I chill my dough, but I don't think it is necessary!. I probably chill it for 20 minutes in the freezer!.
Measure out dough into equal, round balls, and place on prepared sheet pan, spacing fairly far apart (they spread quite a bit)!. Flatten balls using the palms of your hand, or the bottom of a drinking glass!. Use 1/4 cup measure for big cookies!. Bake at 350 degrees F, for 12-15 minutes, or until golden brown and set!. Cool for 3 minutes before transferring to wire racks to cool!.
Makes a ton of cookies!.

Ingredients:

3 large egg whites
1 cup coarsely chopped Whoppers

Preheat oven to 350 degrees F!. Coat a large sheet pan with cooking spray or butter!.

1 1/3 cups butterscotch chips
3/4 cup coarsely chopped salted cashews

Preheat oven to 350 degrees F!. Butter a large sheet pan!.
In a medium sized mixing bowl, sift together flour, baking soda, salt and cinnamon; stir in oats until well combined!.

2 cups sugar
1 cup softened butter
Zest of two limes
? cup fresh lime juice
? tsp!. vanilla extract
2 eggs
3? cup a/p flour
1 tsp!. kosher salt
1 tsp!. baking soda
1 tsp!. cream of tarter
approx 1 cup superfine sugar
In large bowl, beat sugar and butter until fluffy!. Add zest, juice, vanilla and eggs!. Blend until smooth!. Stir together flour, salt, soda, and cream of tartar!. Add to egg mixture and blend well!. Chill at least 1 hour!.
Preheat oven to 325°!. Line cookie sheets w/ parchment paper!. Shape dough into 1" balls; roll in sugar and place on cookie sheet!. Bake 13-15 minutes or until edges are lightly browned!. Cookies should be slightly soft in center!. Cool 3-5 minutes, remove from cookie sheet to wire rack and cook completely!. Store in airtight container!.
NOTE: You can also sub lemon zest and juice for the lime!.

4!. Bake for 8 to 10 minutes!. Cool on baking sheet for 5 minutes before removing to a wire rack to cool completely!.

50g butter (softened)
130g icing-sugar mixture
375g milk chocolate (melted)
1!.5 teaspoon vegetable oil
Action
a!. Beat peanut spread, butter and icing-sugar in,
a small bowl with mixer, until combined!.
b!. Roll teaspoons of mixture into balls!.
c!. Place on paper-lined oven trays and refrigerate,
until firm!.
d!. Mix the melted milk chocolate and oil in a bowl evenly!.
e!. Using two forks to dip one ball at a time,
into the chocolate mixture!.
f!. Drain excess chocolate and return to the tray!.
g!. Refrigerate until set!.
